I'm outside enjoying my caffeine, trying to wake up, and I look up to see 'the glass eye' sitting across from me.

Years ago I was at the local dive bar, on college night, dancing my heart out and having a great time. I happened to see something strange on the floor, rolling toward me. It kept getting closer and closer, and when the light hit it I saw that it was... an eyeball (not really, but still) *GASP* This poor guy was chasing it screaming, "Please don't step on my eye!!"

I will never forget that.

Defriended two people from FB late last night as well as every other social media I was on with them. One was a user, the other was a flake. Cleaning out my closet never felt so good.

In yet another example of why knowing how to bake is helpful for cooks:

The other day chef (which, it is weird referring to him as such since he's my friend and I never call him that) asked a cook to make some clam cake batter.
She made it and it was pretty bad. Heavy and dense. He had me try a bit and said it was meant to be made with cake flour, which we don't have, so I suggested Wondra because it's highly refined, low-protein flour and that she separate the eggs and whip the whites.
Caught her a bit later making the batter and I see her whisking it with some real elbow grease. So of course I'm horrified, and then I think that if this is how she's whisking a batter, her measuring would probably be suspect as well, given how many people just don't know how to measure flour. She had left and I asked him how the batter was and he said she told him it wasn't much different. I told him to let me mix it and I asked to see the recipe because I had a feeling it was in cups, and it was. Problem number one right there. Number two is that I don't think I even saw her use cups, but pints and quarts. Yeah, no. Liquid measure does not equal dry measure.
So of course I glanced at the recipe and changed everything to weight because cups are for chumps. Well, they are!
But also, she would have gotten much better results had she been working from weights. Issues in her technique would be there, but she'd be closer at least. And if you know weight, you can get away with using AP because you need less AP than cake flour to get the same weight, so that's another adjustment that if you don't know better you're not going to make using cups. Where her batter was incredibly stiff from too much flour, mine was significantly more fluid, and a more liquid batter is a lighter, less dense battter.
The clam cakes were excellent --- bubbly, light, and nothing like those barely edible leaden lumps previously produced.

One recipe, two incredibly different results. Baking is important, y'all.
And use a scale!
