I must thank you, I made one of the mac n cheese recipes you've posted about. The idiot/fool proof one and it's good! It doesn't have that strong starchy taste that most recipes have because those use flour. I do wish it came out a tad creamier but it's awesome none the less.

Finally, a recipe I like!
I still want to try a few other ones that you've posted.

Yes! The authors basically wanted a classic, light mac and cheese, so they use evaporated milk because the lack of water in it makes it creamier than regular milk and prevents curdling, but it's still light. If you want a creamier, more substantial recipe, though, you can certainly use cream.
