There's no label at all on the meat?
The reason is that some cuts roast better and some braise better.

If you wanted to braise, you'd season the meat well, brown on all sides, pour off any excess fat leaving a tablespoon or so. You could then throw in sliced onion and some garlic gloves and bay and let them sauté until soft or you could go longer and caramelize the onions. If you had wine or beer you could toss some in then some water. Just enough so that it would be no more than 2/3 up the sides of the meat. Bring to a simmer. Put meat back in there then season the liquid a bit (not too much because it will reduce as it cooks), cover, and into a 200-250 degree oven until you can easily pierce the meat with a fork.

For roasting, your meat won't be gray if you sear it first, just that the outer layers end up a bit more cooked (gray) if seared first compared to if you sear after. It's the traditional way and it still works great, but advances and new methods show better ways is all.

I think it was a cut that was either part of a larger roast or she bought a bunch of meat and bagged it all up individually to freeze. Either way, it is unknown what it is.

And my eyes glazed over reading about braising. I'm not bold or confident enough to braise. That will be for when I can roast.

I still make a killer steak and porkchop thanks to you, so I will practice with the roast. If it turns out delicious, I will consider attempting braising. So far it sounds scary like broiling (which I failed at the one time I tried).

Braising is actually easier than roasting (roast beef po' boys are actually braised beef). Braising and stewing are two of the easiest and most forgiving methods for cooking meat.
I'd say make carne mechada, but you probably don't have the ingredients. My mom stuffs it with Dominican salami, Puerto Ricans usually do ham.

Braising will have to wait because I don't have anything I can put in the oven that can hold the roast.

WTF i touched it and it crumbled, but not burnt black. UGHHH

guess thats the almighty's way of saying you shouldn't be eating a hotdog.

BUT I ATE NOTHING TODAY...not intentionally.

I've only had good red velvet once in my life. Everything else was too dry.

I want okonomiyaki!!!! and all the Mexican food I can eat. Wait, she said breads right?
