Cereal Rant: Why Buzzfeed Is Wrong, These Cereals Should Not Be Obliterated | Serious Eats

Although I don't care about cold cereal and haven't eaten it in like ten years, based on my childhood memories I must agree with most of Leandra's article. I mean, Cream of Wheat? GTFO!

This actually happened a few months ago and it might be permanent but I didn't want to admit it anywhere and make it real because NO. Just NO. I can't even think about cheeses and custards right now.

Note to Leandra's personal list to obliterate, though: LEAVE GOLDEN CRISP ALONE IT TASTES LIKE CHILDHOOD

Omg I'm so glad y'all hated the trix kids too. I used to get so upset thinking about that rabbit.

I remember my mom buying it once, maybe twice. It tasted like sugary colors. Seriously, I remember being able to taste the dye. Still liked it, tho.

A blind date with a book is the only kind of blind date I'd agree to go on.

You're going to be one of those sicky/incapable of doing anything pregnant women aren't you?
Fat does not make you fat. It's actually pretty important.
Some of the comments on the latest LBD video are ridiculous. Lizzie's been hating on Darcy for the bulk of the show. It's therefore important to show us how much affection she now has for Darcy otherwise it would feel terribly one-sided. Secondly, they just started a relationship and this is the honeymoon phase. Third, people really need to stop with the idea that a woman having a love interest and being into the guy she's dating somehow makes her weak/less independent/less feminist. It's honestly really gross how often female characters are basically not allowed to fall in love and show real emotion without someone complaining that they're weak and unable to think clearly. Lizzie made it very clear that she didn't want a job at Pemberley just because she was his girlfriend. And fourth, it's freaking adorable and I really don't get the hate-on people have for couples being affectionate, both in real life and in fiction. We've honestly glamorized dysfunctional relationships to such a point that people act as if there's something repellent about anything other than cool indifference and insist on the need for relationships constantly having problems or they're somehow less "real".
The pretzels are ridiculously good. I wish I liked beer because they would be amazing with beer.
I wanted to do cheese and pepperoni, but I would have used such a small amount of pepperoni that I didn't want to buy it just for that.

First you roll nice tight sealed rounds, which is key, then because pretzel dough is a very stiff dough and because it's made with bread flour which is high in gluten, you let it rest to allow the gluten to relax. Then it's just a matter of continuing to roll and rest until it's the necessary length (at least 16 inches).
The rest comes from the lye bath. Baking soda bath works okay for the color, but the lye gives incomparable(and true, classic) flavor and more sheen.

You use food-grade lye. Baking soda is the replacement, not baking powder. Unless you mean the dough, which should be yeast, not baking powder.
It's really the shaping though. Knowing how to shape a simple boule and properly seal seams is important. You just need to practice.
I ate trix and gave some to my rabbit!! she liked the orange ones the most if i remember correctly. i loved kix. and cream of wheat was something i grew up on. my grandma mae it with canned milk and butter. soooooo yummy on a cold winter morning. or if it was now, a freezing, cold, snowy spring morning. corn flakes wtih a dash of sugar was ok. probably because of the sugar. i think it was tastless. cant remember.

i want this button:

Once again saria, you the bees knees!
No I can't come visit you, I have to work. No you can't come visit me, I have to work. WHY CAN'T MY FAMILY UNDERSTAND I HAVE NO LIFE. I literally have no life. I do, but it is a miserable one consisting of no fun. I'm sure my parents enjoy the fact that it's not even possible to have a social life (which I would hate) because I live at my job during the weekend, so they can sleep peacefully knowing I'm not doing normal college things like getting super sh*t faced and getting dui's, running people over because I'm drunk driving (oh it has happened every year here), arrested, breaking/destroying public property, annoying people at 24 hr diners with public drunkenness, pissing myself in my sleep, pissing myself on a friends couch, throwing up on a friend, throwing up in the street, throwing up on people's cars, you know the college usual's.

Jeez, why can't I have one of those families where no one likes each other and don't want to spend time with each other. I'll see you next weekend jizzzz and lice.
Food grade lye makes better-tasting, glossier pretzels, but it's your shaping that needs work! The basics first!

Specifically pretzels:

And just FCI's bread videos on rounding and shaping:

Of course the videos show the shaping, but it's very important that dough rests when trying to roll it because the gluten wants to fight the process.

Speaking of lye, I made my pretzel croissants on Saturday (I didn't get a chance to take pics) and I brushed them with the lye solution since croissants are delicate unlike sturdy pretzels and bagels. Well, the pastry brush got all soft and floppy. I think I relaxed the hair on my pastry brush!

Blah. I have about 5 inches of snow now and it's still pouring. It is pretty when the wind blows it onto one side of the trees, though.

When I hear terms like "hipster" I think, who told cliques they could leave high school??

Ugh I have been PMS-ing for weeeks now. I hope this means I don't skip March altogether...that is the worst.

My sister (21) and I are on the same cycle (we're like sisters--only closer) and she hasn't started either. We're blaming each other, but we all know who's fault it is.

Also: My dad is perf. I need to go back to Texas for weddings/ sister's (18 ) graduation and I was going to drive bc flying all over Texas is ridic. So my dad said he'd help me pay for a rental car <3 <3! AND he said he'd fly up here and drive back with me when I finish school in Aug. I was soooo freaked out about moving alone. Perf parent is perf.
