Campers!!

We always go camping for 3 days/2 nights, but just booked for 4 days/3 nights this summer.

Second night dinner always turns out a little so-so, so already thinking about what the heck to do for a third night.

Anyone have great recipes/ideas?

If you want to do a breakfast for dinner. I like to make blueberry muffins in an orange. It's really easy most of the prep you do the night before you go camping. Basically you cut an orange in half and scoop out the segments carefully so you don't tear the skin. Mix all of your dry ingredients in a ziplock bag. At the campsite you just add your wet ingredients to your dry and gently squish it around in the bag, adding your blueberries last as not to smoosh them up. Cut the corner off the ziplock bag and pipe your muffin mix into one of the halves of oranges intl it is full. Then top with the other orange half and wrap completely in aluminum foil and either throw on some hot coals or right next to your campfire and cook until the muffins are done. Serve with some eggs and bacon cooked in a paper bag/foil packet.

For lunches or dinner we like to make campfire pies. You can get one off of amazon. I recommend getting the cast iron ones because those last forever. But basically you can make kind of pie or hot sandwich. I've made them filled with a cracked egg & bacon, lunch meats & cheese, sloppy joes w/ cheddar, various pie fillings, fresh fruit w/ Nutella, and one with raisin bread& a cheese Danish filling. Our campfire pie makers get a good work out every time we go camping. We have even used them separated as mini pans to cook stuff like eggs and bacon and omelettes.

There are a number of things you can make in foil packets. Also if you camp a lot a cast iron Dutch oven is a great investment since you can make all sorts of things in it. From stews to even bread.

And now I really, really want to go camping.

That is a circular one. There is also a square one. We have both because it's easier to make a meal for four when you have more than one.

I was grocery shopping today and picked up a bunch of snack food, and those Lipton's sidekicks. I didn't realise they just need water and butter, so that's an easy side.

Not sure what to serve them with? Maybe Hawaiian buns? I do those at home a lot and think it would be pretty easy to do in a cast iron pan because you just really want to warm them through. Might be good to plan that stuff for the last night, then just having to keep cold cuts & cheese cold.

No I haven't done pizza yet. But I think in a Dutch oven it might be good since like in an actual oven you have hear coming from the top too. You could experiment if you wanted to with a regular cast iron pan before you go camping.

Night 3 - No clue why I haven't thought of this stuff before. The only thing to keep cold the whole time is the paneer!
