Anyone ever made sourdough?

I had no idea it was possible to make your own bread just from flour and water. I started looking into it yesterday, on how to make a starter. I was wondering if anyone's had any experience with this. Seems really interesting and supposedly it makes the bread much healthier to digest and more flavourful.
I haven't. I rarely eat bread, but my mom & sister always had a starter batch in their refrigerator. Once I had gone to TX to visit family & stayed at my parent's house. I thought it would be nice to clean the house & do laundry while they were at work. I cleaned out the frig & threw out the starter dough thinking it was something that had spoiled. Everyone was at the lake house when my Grandfather had passed away and someone tossed my aunts kefir thinking it was something spoiled. She hit the roof, my other aunt called us (we were out picking up groceries) telling us not to mention it, and we were in the car dying laughing at that background noise. It bewilders me that you can keep the starter for as long as you like as long as you "feed" it. I definitely want to give it a go. I'm trying to improve my eathing habbits and not eat so much processed food.

Just don't be too optimistic. I have zero baking skills.

Off topic, but I also wanted to add that on one of my visits I decided to weed my dad's garden. I pulled out all his new strawberry plants. I'm surprised I was ever invited back to visit. I do mean well.

I have tried this. It was an adventure. I really struggled with getting the starter going properly, because I began this project in the summer, and I think it was too hot in my apartment for things to work right (if the temperature is too high, I think that the wrong kinds of yeast proliferate and create alcohols). I can't remember how I finally got the starter to work...I might have had to use some whey in the initial culture to get the right kind of bacteria to grow.

I made the bread with 100% whole wheat (once I got the starter to work), so it was really, really dense and pretty dry. If you don't like bread that is this way (you have to kind of be a serious health nut to tolerate it, lol), I would definitely add in some white flour to make the bread softer.

I'm thinking of mixing both types of flour. Most whole wheat bread you buy at the supermarket is actually mixed anyway (though I try to buy the ones where the whole wheat is listed first). My starter is only whole wheat though, which is all I have right now, I'll have to shop for more flour this week.

I am a little worried my flour has been sitting on the shelf too long, but I'll just start a new batch if this one doesn't work out. I made it sunday night and just fed it for the first time. It was beginning to bubble and when I stirred it with a fork, you could see that it had become sponge-like in texture.
I don't remember all the ins and outs of sourdough, but I'm not sure that you want to use any white flour in the starter. I think you want the starter to be 100% whole grain. I would just add the white flour when you make the bread (you use so much starter as yeast for the bread and then add your bread flour, so you don't have to have white flour in the starter).

Definitely get yourself some good-quality flour for the starter. It is disappointing to cut corners at the beginning and then go to all the work for the bread only to have it turn out poorly because of something simple like not having fresh flour. I know from experience, unfortunately!

Oh yikes...I went to check on it again and there was green mould inside the recipient. Had to throw it away. It had also become very liquid in texture.
I wonder what made it go bad. This sounds like quite a project. I googled this & I had no idea what all went into making this. My brother in law was the one who would make the starter & give it to people. He loved to cook & tinker in the kitchen. It could be that the weather here is too warm and that might warrant a bit of tweaking. The first batch was very spur of the moment kind of thing, I'll try to be more methodic the second time. I haven't gone to buy more flour yet. I have a bit of sinus infection, so I'm heading straight home after work to get some rest.
