My recipe is called Healthy Waldorf Salad
1/4 c nonfat plain yogurt
1 tb orange juice or lemon juice
1 stalk celery, cut into small pieces [opt]
1 lb lean skinless chicken breast boiled & sliced
1 tart green apple, peeled, cored & diced small
1/2 c seedless grapes, halved
1/4 c dried cranberries or golden raisins
1/4 c toasted raw almonds, slightly chopped
Bring 2 inches of water to boil in a skillet, add chicken breast, reduce heat, and let simmer 8-10 minutes.
Do not let water boil or chicken will be tough.
Cool & cut into 1-inch chunks.
Combine w/ apple, celery, dried cranberries, or raisins, and almond pieces.
In a small bowel, stir yogurt & orange juice together.
Pour over chicken mixture & toss well to coat.
Chill for at least 1 hour.
Opt..serve on romaine lettuce leaves.
