Do you have a favorite Waldorf Salad receipe?

1/4 c nonfat plain yogurt
1 tb orange juice or lemon juice
1 stalk celery, cut into small pieces [opt]
1 lb lean skinless chicken breast boiled & sliced
1 tart green apple, peeled, cored & diced small
1/2 c seedless grapes, halved
1/4 c dried cranberries or golden raisins
1/4 c toasted raw almonds, slightly chopped

Bring 2 inches of water to boil in a skillet, add chicken breast, reduce heat, and let simmer 8-10 minutes.
Do not let water boil or chicken will be tough.
Cool & cut into 1-inch chunks.
Combine w/ apple, celery, dried cranberries, or raisins, and almond pieces.
In a small bowel, stir yogurt & orange juice together.
Pour over chicken mixture & toss well to coat.
Chill for at least 1 hour.
Opt..serve on romaine lettuce leaves.

My fav is lettuce, tomatoes, carrots, baby spinach, a lil' bit of cottage cheese, and pineapple chunks. Add a bit of balsamic vinegrette and you're good to go.

--dark green lettuce mixed with spinach or a LITTLE iceberg

--red cabbage
--hard boiled eggs, preferably chopped
--cucumbers
--red or yellow bell peppers
--lots of red onions
--feta cheese, preferably in large blocks
--regular shredded yellow cheese
--shredded carrots
--chickpeas
--pico de gallo or the black bean/corn/tomato mix
--croutons, sometimes
--I don't usually put meat in my salads, but if it's chicken, it must be fried/crispy....not grilled.

Dressings:

--Russian
--Asian or some sort of "Asian sesame"
--Honey mustard
I never really was into the salad scene. I'll have to try some of the ones mentioned here with fruit and nuts and things. This many curlies can not be wrong. But, I do like fried chicken strips in my salad along with corn and green onion.

Since I last posted in this thread (wow, it's been years!), I finally experimented enough to be happy with my homemade ranch and blue cheese dressings, so I'll add them to my list of favorite salad things. I have never ever liked bottled dressings and haven't had them in the house for many years and always made a dressing of olive oil and really good balsamic vinegar, which I still love, but it's nice to have a change.
