What's for lunch?
2 hard boiled eggs
sliced apples
grapes
crackers w/goat cheese
It's too hot to cook and nibbling/grazing is the way I'd rather eat.

I will be having a cup of spicy tomato soup. I had a cup of curry lentil soup for breakfast, and I'll probably have an Asian scallop veggie soup for dinner.
This is why I love winter

Well, we made for the lunch catering today (45 people):
-Meatloaf
-Herb Roasted Lemon Chicken
-Herb Roasted Potatoes with Bacon
-Fettucine with garlic and oil
-Big mixed green salad with tomatoes, cucumbers, onions, apples and cheddar cheese with an orange balsamic dressing
Me? I've had an apple and 2 Reese's Peanut Butter Minis.
Boyfriend has had 1 chicken pincho.
About to heat up some left over pizza!

Courtesy of the hospital cafeteria (amazingly good food!):
Penne fantastico (penne pasta, sun-dried tomatoes, a bit of cheese)
Cooked carrots
Dinner roll
All of the above for nine WW points.
And of course a diet Coke.
Right now I'm munching on some grapes.

Today is one of my favorites: brown rice with quinoa, chicken, mushrooms, sun-dried tomatoes, tons of parsley but unfortunately, not enough garam masala.
My boss just walked by and said, "I smell pizza!" LOL!!!

Leftovers - rotini with green beans, romaine, soy beans, black beans, and rosemary chicken (and way too many hot pepper flakes! kind of went overboard. good for cleaning out my sinuses tho.).
And sauteed apples.

That's why I make it on weekends and freeze it in tiny cups! I eat soup every single day, but I could likely eat it for every meal.
My best friend made a yam, carrot, barley, and fish head soup last night. I just love when she throws everything together and it's AMAZING.
