So this evening I left a pan of potatoes on to boil and then forgot them- for a long time

Cue smokey house, ruined pan and massive headache because of the smell.

Been there. Be glad you didn't set the whole kitchen and house in flames. I almost did that a few months back with a bamboo steamer that I forgot about and left to boil dry. Bamboo can indeed catch fire.

Everyone does it at least once. I have a little pinger that I put in my pocket to remind me that I have a pan on the hob.
