Alright, I'm finally satisfying my stuffed shells craving. I'm having them tonight! Shells are stuffed (ricotta, mozzarella, spinach, and lemon zest), sauce is made (just tomatoes, garlic, and Aleppo):



I'm taking them to my brother's place, where all I'll have to do is sauce them and bake them.

Yum!! I'm not a big pasta eater but those look and sound delicious!! What kind of sauce did you make?

We are going my BIL and SIL's house for dinner so all I know for sure is that we're having the corn on the cob that we're bringing...not sure what else they're BBQing.

Oh, I edited it and added that part in later. It's a very simple tomato sauce with garlic and chili flakes because a hit of spice in the sauce is great with cheesy pasta (heck, most pasta). I used the Aleppo because it's such a bright, sunny-tasting heat and it's also milder than typical chili flakes, which is important since my nephew will be eating (hey, might finally get him to have some spinach).

Having friends over tonight to celebrate a birthday. I'm making pasta with a smoked chicken-garlic-sundried tomato cream sauce. We'll have a green salad with hazelnuts and lemon-olive-oil dressing.

And a lemon sour cream cake for dessert!

I made shells with a chicken tomato sauce last night.

I would call it spaghetti, but I know it wasn't.

I did. It wasn't as good as it was in my planning, but it was definitely good enough!

I also made carne con achiote that night! I was so happy to be able to eat regular food!

And now, even though I have the rubber bands still in for a little over a week more, I can eat anything I want. I'm thinking I'm finally able to eat my In n Out burger. (I think I can finally open wide enough to put a burger in)

Trader Joe's mini chicken tacos. Thank mercy for the demo's they do because I probably wouldn't have bought these and I feel like CRAP tonight so this was quick to heat in the oven. Sour cream and salsa on the side.

Lovely fall day here so I made sauce and meatballs.
Went and picked apples and made a big pot of applesauce. Mmmm.
