Last night was fish stew.
Tonight will be puffy scrambled eggs in the micro (with cream, onions, asparagus, and whatever else I decide to throw in with the eggs)
Making homemade BBQ sauce tonight so BBQ chicken will be on the menu sometime this week.

I made a kale and herbed chicken sausage casserole type thing. It has kale, onion, cannelini beans and garlic tossed with salt, pepper, paprika and olive oil that I topped with fire roasted tomatoes and herbed chicken sausage cut in pieces on top. It's all in my cast iron magic pot (the buffet casserole dish from Le Creuset, hardest working pot in my kitchen) and baked for an hour then uncovered so the sausage can crisp up a bit for about 15 minutes. Dutch crunch rolls on the side for the saucey goodness.

Chicken and rice soup.
Is it just me or is it damn near impossible to make a small batch of soup? I have enough left over to feed an army.
Rice krispy treats will be making a repeat performance tonight.

I love Big Bill's! The owner (Big Bill) is former NYPD, there's lots of NY stuff there, including a map of NYC & Long Island, and if you are from there you can put a pin with your name on a flag in it. The guys on the line talk to you when you go in to pick up your pizza. And when you leave a tip the cashier says "A little something from TRBL guys" and they all look at you and say "thank you TRBL"
So anyway, if you are in the Denver Metro & want NY style pizza, go to Big Bill's is all I'm saying. They have cheesecake that is to DIE for, marscapone in the filling and nuts in the crust.

This is why I have plenty of one-cup tupperware containers and why I don't have to make my lunch very often!
When I'm making soups/stews for more people, I tend to freeze the remainder in 2-3 batches so I can pull out one at a time without us eating it daily for a week.
I made this last night and I doubled the recipe so I have way too much leftover.
I have plans for spinach ravioli with eggplant and zucchini for dinner, but I'll probably get lazy and have soup instead

I don't know yet, probably baked potato with coleslaw and/or cheese. It has to be soft, I have dislocated the cartilage in my jaw.
