Cream of tomato soup (used tomatoes from the garden, yay!) with oyster crackers and grilled cheese with pepper jack and American.

I made a big pan of shortbread. And ate a bunch of them. Not really the best thing for a sugar free low carb diet. : )

Chicken soup made with homemade broth, veggies, and egg noodles along with salad and biscuits.

I think I'll go for this tonight: Broccoli Cheese and Potato Soup | Skinnytaste It's our one raining/nasty day this week so I think that calls for some soup

What should we have with it? The soup itself already has veggies and the carbs from the potatoes so I don't want to do more carbs (I was thinking french bread).

I was going to do leftover tomato soup and grilled cheese because it is so nasty out, but I bought talapia at the grocery and probably need to go ahead and cook that. Will report back! lol

Chicken pot, chicken pot, chicken pot piiiiie (does anyone get that reference or do I just look like a moron?) with drop biscuit crust, it's a favorite 'round these parts.

Pumpkin spice cake with walnuts and cream cheese frosting for dessert.

I'm drowning in tomatoes, does anyone have a favorite sauce recipe?

I'm making chicken enchilada casserole...basically enchiladas minus the rolling part. Hopefully it's good, I made the enchilada sauce last night because I can't find a good canned one...this could either be really amazing or a complete disaster.

Jaynee, I'm not sure if they carry it where you are at, but I love Fernandez Dry Enchilada Mix. It's in the international section of the grocery store. It's a just add water & simmer type thing (although when I use it, I will highly season & cook my meat, remove it & use that pan to make the sauce. That way the sauce picks up the seasonings and any little bits of protein left).
