What's for dinner?

I haven't cooked or eaten marlin, but grilled seems it would be the best way, or maybe marlin tempura bites with a sweet chili sauce. Grilled marlin tacos?
Broiling with a chunk of compound butter of your choice would probably work nicely as well.
Thanks for replying for my not-so-subtle plea for help...

Grilled would probably be delish. I searched for recipes and didn't come up with much. I like the taco idea.

Last nite...turkey meatballs/egg noodles/gravy
Tonite...turkey sausage link fajitas
I think tonight we'll have grilled ham and cheese with tomato soup.

Something with bananas and walnuts needs to be for dessert because I've got both and the itch to bake something cake-y.

I've decided that I'll never get down to my original weight, and I'm OK with that--After all, 8 pounds 2 oz. is just not realistic.
Banana upside down cake. Or banana-walnut cake (or cupcake) with brown butter-brown sugar buttercream or sour cream frosting. Depends on ripeness.
If you have coconut, a coconut and walnut cake with a piece of caramelized banana. Looks slightly phallic.
A caramelized banana will never look the same to me again after that suggestion.

I have 3 really ripe bananas so they need to be mushed and put into...whatever I make. I wish I had coconut, that would be great added into cake. I may go to the grocery tomorrow to get ground beef for chili on Thursday (it's supposed to be cold and rainy...wewt!!) so maybe I'll hold off until I can pick up coconut.

Yesterday I made Kalua pork and served w rice sautéed greens and Mac salad. Today I added some homemade hot sauce to the pork and served with rice black beans and a simple oil and vinegar salad. I'm all porked out now.

Ground beef/lentil/sausage, caramelized onion and spinach lasagna, salad and garlic toast.

Babin's Seafood House
I had the crab cakes and will have the leftovers for lunch
Can't remember what drink I had, but it was in a tall, hurricane type glass, w/ vodka, I'm sure

Jeepy, the cocoa wafers I make are awesome straight out of the freezer, so I can relate!

A really really good pot roast braised in the oven for about 2 1/2 hours then added carrots and potatoes. Wished I had some turnip....I love turnip. Or parsnips. But in any event it was really really yummy. Oh...the 'gravy' was excellent too.

Fish stew.
And for dessert I tried a new low carb treat I found online called Mini Mascarpone Choconutty Bites. Super easy and fast to make and a nice sweet treat (sugar free, gluten free, low carb).

Sausage, kale, white bean soup with tomatoes.

And for some reason I'm being punished and the last THREE skillets of cornbread I made were nothing more than filler for the trash. I'm absolutely stumped. What southern girl messes it up three times in a row? I'm almost scared to try it again.

Jeep could you share the link for the dessert?

Roasted chicken, parsnip mashed potatoes, steamed broccoli.
hello.world.
Here ya go spring. I used less sweetener than the recipe calls for because I don't like things super sweet and I used less butter simply because I didn't see any reason to use that much.

Mini Marscarpone Choconutty Bites

The center:
1/3 cup marscarpone cheese
1/3 cup unsweetened coconut flakes
1/3 cup coarsely chopped walnuts and/or pecans
3 Tbsp sweetener

The coating:
4 Tbsp butter
2 Tbsp heavy white cream
2 Tbsp unsweetened cocoa
1/4 cup sweetener

1. Combine filling ingredients in mixing bowl.
2. Form into balls.
3. Chill in refrigerator for an hour on waxed paper.
4. To make the coating, melt butter in microwave. Let cool a little and add cream.
5. Stir in cocoa and sweetener.
6. Roll bites in chocolate, coating thoroughly.
7. Chill on waxed paper until ready to serve.
8. Keep refrigerated.

Makes about 15

Thanks!!

I love that extra R in mascarpone....which is exactly how I used to pronounce it until I realized...uhhhhh, it's not spelled that way. Then I tried to recall if I ever said it in public and looked like a maroon.

I don't usually correct people but I actually told the woman who has this recipe that it was spelled wrong on her website because she's putting it in a cookbook and I thought she'd want to know.

But I was too lazy to change it when I pasted it here. I'm eating some of them right now! : )
