We had guacamole and chips (avocados were on sale, yay!) and leftover mac n cheese. Weird combo, but it helped a little with my I'm-craving-game-day-snacks issue.

I picked up a lg chicken parmesan pizza from papa Johns.
-onions, +mushrooms, +black olives

We ate the whole thing. That never happens.

We went to my parents house for pulled pork and lots of snacks. My dad put the pork on his smoker at 9:00 last night and took it off at about 1:00 this afternoon. Add some homemade BBQ sauce and it was tasty!!

today is National Chopstick Day according to Foodimentary, so i'm going to make pork and eggplant in black bean sauce with steamed brown rice.

i'm getting hungry just thinking about it!

Is that the recipe on skinnytaste? I keep intending to make it, but I did a double batch of carrot peanut soup, spicy tomato blue cheese soup, and about 6 different appetizers yesterday, so I wasn't about to make that one!

Split pea and curry lentil soup on deck this week, so I'll probably do that one sometime this weekend.

Tonight's dinner is probably quesadillas. I have leftover cooked chicken that I'd like to use. I'm tempted to make a BBQ chicken wrap with the extras too.

That's the one, Munchy.

I used less tomato sauce (8oz can), more bell pepper and changed up the spices, but it was really good. Next time I'm going to use half ground beef and half lentils and see how that goes.

I saw the pic and knew I had to make it - I'm going to try it as is and then tweak it next time

Pretty good. Though I'm still not sure how to cook quinoa properly.

I find quinoa much more forgiving than rice.

Peppered Beef Tenderloin Recipe | Yummly

This (minus the lemon peel, and with pork tenderloin instead), plus roasted potatoes and cauliflower. The roasted potatoes have the garlic, salt/pepper, olive oil, and rosemary thing going on too. It's starting to smell sooo good in my kitchen right now.

I cook quinoa like pilaf or like pasta. Those are both simple methods.
Rice I can cook like a mother****er in my sleep, so I don't know what to say about that.

I know we had a thread on rice with lots of advice in it, but mine still comes out not so great. I cook it wide awake and it's still meh.
