I've got tuna salmon noodle casserole in the oven. That always sounds so gross to me, I need a better name because it's really delicious. I put lots of onion, celery, and carrot in and also some broccoli with lots of dill and lemon and a panko/cheese topping for some crunch and used basil fettuccine noodles. Mercy, I'm hungry! We'll have a salad on the side with mixed lettuce and baby spinach.

Went to the diner with the oddparents. Liver and onions, green beans, mashed potatoes, applesauce, a soft warm roll, chocolate chip cookies. Can't get much more comfort food in one meal.

Have a big garlic roast in the crock pot. Will have with romaine sauteed with garlic and hot pepper flakes. And some strawberries dipped in melted 85% cacao chocolate.

We're going to have spaghetti (homemade sauce, woo hoo), salad, and garlic bread.

My dad and second mom get here today to stay for a week so it will be interesting having two more folks to feed! My dad can be a little picky so should be fun.

Baked fish with a parmesan/pine nut crust and greens n beans.

I had no idea that cooked romaine lettuce would be so good. For typical Italian greens n beans I've always used escarole or dandelions. But I saw a recipe for sauteed romaine and I had a ton in the fridge so I thought I'd give it a try in this recipe. I thought maybe it would melt down to nothing like other lettuces do when cooked but it turned out great! Yum yum!

Last night we had a late lunch/early super (lupper) and DH and I shared fish and chips and a bbq sandwich with fries at a restaurant. It was ok.

Tonight I'm making tacos with all the fixin's and Spanish rice. Definitely making guacamole so I can watch my dad make a face and say "ewwww". I might make some bean and corn salsa so he'll have something to dip a tortilla chip in.

Quiche made with crab, spinach, swiss cheese, and onions. A salad to go with it and a couple fancy chocolates for dessert.

We're going to Chevy's Fresh Mex for a birthday dinner. I might have picked something locally owned and a little different to try, but since I've got family visiting I knew it would be something we'd all like. I've never eaten there, but the menu looks pretty good and there is the chance of having to wear a sombrero since it's my birthday which is always....fun.

Last night we ate at Pacific Catch and I had the California roll salad: real crab salad, avocado, cucumber, ginger, tomatoes, carrots & shredded nori with soy-wasabi vinaigrette

I've got a pork roast in the crock pot now with a dry rub on it so we're having BBQ pulled pork, Boston baked beans (I cooked them forEVER so they better be good!), coleslaw, and deviled eggs. My second mom is making brioche buns to have the bbq on .

I'm attempting to make broccoli cheese soup with some ciabatta rolls. I hope it comes out good. Its a favorite of my hubby's.
