I combined and switched up a few different recipes I found online and this turned out really really well.

MUSHROOM SOUP
16 oz fresh mushrooms, sliced (I used a mixture of different kinds but mostly white button and crimini)
1 glove garlic, chopped
1 small onion, chopped
2 TBL butter
1TBL olive oil
salt, pepper
2 cups chicken broth (I used vegetable/herb broth)
1/2 cup cream
1/2 cup water
1/4 cup cream cheese

In large sauce pan add broth, cream, water, cream cheese and heat on low, stirring often.
In large skillet add garlic, onion, butter, oil, salt, pepper. Cook til mushrooms start to brown. Add to sauce pan and heat through to blend flavors.

The big kid is with her grandmother and we are both exhausted and didn't want to cook, so it was pizza. We will do the tacos that were planned tomorrow.

Ground turkey chili and it was yummy. Served it with crusty bread and butter. Perfect for this cold, rainy night.

Taking dinner to my parents house for my dad's 79th birthday (and going to watch the Titanic movie since it's the 100th anniversary). Older sister making scalloped potatoes and ham (gotta use up that easter ham). I'm making white macaroni, my dad's favorite (pasta, olive oil, browned garlic, hot pepper flakes, salt, pepper). Younger sister is in charge of birthday cake/cupcakes/brownies/some kind of dessert.

I haven't had spaghetti in years (never really was a fan) but for some reason I'm craving it like crazy today! So maybe that..I already found a recipe online...gonna run to the store now to let the sauce simmer till dinner...ooo and garlic bread.

Tender and juicy steak (grilled to perfection), baked potato, and a medley of fresh vegetables. All curtsey of my mama, and after a month long illness... greatly appreciated. I can taste food again!!!

appetizer night (aka - cleaning out the fridge night)

leftover stuffed pepper stuffing (roasted veg + rice + ground turkey + random seasonings) rolled in breadcrumbs and made into meatballs. Serving with cranberry sauce

poached scallops and cauliflower in butter sauce. Yes, I know you don't really poach cauliflower but that's a round-about description of what I'm doing.

fruit: pineapple, watermelon, grapes, strawberries

I'm so sick of eating my own cooking that a ham and cheese sandwich my neighbor made today tasted like the best thing EVER.

Beginning to wonder if I could teach the dog to cook a few meals....
