Chili salad, one of my favorite things. And I really shouldn't make corn bread because I'll eat the whole pan, but I really want some. And yes, I only make Jiffy cornbread mix. Love it.

I just make a batch of thick, homemade chili and put some over a big of pile chopped romaine and raw onion. It's hot and cold and spicy and crispy all at once. Mmm.

Yes! I do the same thing with my chili. There's something so very satisfying about ice cold crunchy romaine topped with hot spicy chili. Yum!

I have never done that...must try. I've always thought of chil as a winter food...it's already in the 90's in Texas...maybe that will make it summery enough....

And I've never had chili salad, but now I want some.
I have no idea what dinner is, probably leftovers of the mushroom pasta even though I ate so much of it last night I'm sick of it already. I really want a big plate of french fries.

There really is a big difference when you make cornbread (or anything really) with a really good, fresh stone-ground cornmeal. Way more flavor.

Thanks guys. I've had really good homemade cornbread many times. I just prefer the taste and texture of Jiffy cornbread mix. What can I say, I like what I like.
And right now I'd like someone to send me some good guacamole cuz there were no perfect avocados at the store today. So get on that please.

I've got guacamole covered!!
My MIL was so sad when she decided to be a vegetarian because it meant she could no longer eat her beloved Jiffy cornbread.  I'm pretty sure all these years later she still mourns that loss.
