Dinner out with the oddparents and sister. I had a very good crab cake with rice and veggies, a piece of my dad's pizza, some of my sister's fries, and a piece of my mom's giant cheeseburger.
Tomorrow I need to get back to some healthy eating!

I've never had jiffy cornbread mix but I'm curious what's in it that's not compatible with a vegetarian diet?
Isn't it similar to a cake mix (I don't use those either so maybe there's something in them too... Hmm?).
I think I'll stick to baking/cooking with real natural ingredients

Eating light tonight since I ate so badly on vacation. Turkey burger sauteed with onions, garlic, and mushrooms. A bunch of roasted veggies with soybeans, walnuts, and sunflower seeds.

Haha, me too. Even a 3 day vacation is hell on my digestive system.
Yesterday was salad.
Today, garlic and herb tilapia, quinoa rice w navy beans, and peas.
Tomorrow will be vegetable and chicken soup.

Stir fry veggies:
broccoli
snow peas (from our garden, yay!)
carrots
onion
gypsy pepper
edamame
shredded cabbage
It was so freakin' good I could have eaten three bowls! I want to FFWD to lunch tomorrow just so I can eat leftovers.

Taco Thursday!
I added pinto beans in with the ground beef, but I seriously need to cut back on the cayenne in my taco seasoning mix next time. Muy caliente (is that right??)!!

I've been doing salads for dinner every once in a while and tonight's was delicious! Baby spinach, shrimp, fresh mango, avocado, and a little bit of red onion. I also made a dressing with olive oil, white wine vinegar, salt & pepper, and a little bit of sugar. Yum!!!

I've got a beef roast in the crock pot with a packet of Italian dressing seasoning mix (I broke my no packet rule and I'm ok with that), bottle of beer, and a jar of mild pepper rings. Will it be edible? I have no idea. If I don't double over heaving I'll report back.
I may do crispy smashed roasted potatoes and corn as sides, we'll see. Some of it destined to be sandwiches if it's edible.

baked swai with parmesan pine nut crust. roasted veggies. fresh strawberries. I eat this often but I love it.

There's one of these in Leesburg! I haven't been yet though. Please report back. Maybe we'll try it tomorrow.
As for tonight, we'll probably have sausage and peppers with some sort of tomato sauce over pasta. Easy and tasty.
