It's a side dish. It has pineapple and red pepper and onion I think and coconut milk. It's just a favorite of mine and I haven't quite been able to duplicate it. But that's part of the fun of cooking!

We ended up going to a favorite dive bar out in the boonies and had some grilled chicken salads with awesome seasoned fries and watched the sun set over the lake. Nice relaxing supper.

Oh boy, it wasn't even a recipe. I had some black beans soaking over the weekend (about 2 cups worth) and I cooked them tonight in a pot of water on the stove. I used an immersion blender to mash some of them up (this is where it ended up too soupy for burritos) and added some diced tomatoes and red onion along with sea salt, cayenne, cumin powder, and chile powder.....it was all to taste. Once I decided on it being soup, I added in a little chicken broth as well.

In a tribute to the last of the somewhat cool weather I'm making a six bean soup and cornbread.

It's a mix I bought at the Heifer International gift shop when we visited their home offices in AR. What a neat building! We learned about how the architect incorporated all these 'green' aspects into it and it was so inspiring. Plus we learned about their organization and the work they do.

This is the soup I got from the Women's Bean Project. It's smelling SOOO good!

English muffin pizzas with mozz, Canadian bacon, onion, mushrooms and an ear of bi-color corn.

Fresh cherries and I mixed yogurt and brown sugar together and drizzled over it.

I'm counting calories so it was only 1/4 C mozz, but thank GAH that stuff goes a LONG way because that was the best quesadilla EVAR.

My sister came to town and invited friends over (to my house) without much notice so I had to come up with some eats in a hurry.
I made 2 pizzas (Pillsbury dough, so easy). one with sauce, fresh oregano, parm cheese. the other with a touch of olive oil, chopped walnuts, fresh chives, and bleu cheese.
veggies and bleu cheese dip
garlic/bean dip and whole grain crackers
and mojitos for dessert. : )
