Last night I had a sauteed onion/pepper/garlic/spinach rice mix, maple/dijon salmon, and roasted asparagus.

Tonight will be grilled teriyaki chicken, Asian three bean salad, and roasted cauliflower.

My days have been so hectic lately, so my plans have been out the window. I'm hopefully making a summer squash ricotta galette tomorrow with a tomato salad.

doing a 3 day clean eating detox and today is fruit day so dinner was a big fruit salad of watermelon, pineapple, and grapes with some mint and hot pepper flakes.

Grilled chicken breasts and a choice of roasted squash & zucchini, green beans, corn on the cob, potato's browned in butter, homemade rolls and poundcake for dessert.

It's my brothers birthday dinner, and I'm more than happy to enjoy.

Went to a cookout today so dinner was a whole bunch of food! I'll forget half of it at least but here's a quick list - the usual hot dogs and hamburgers on the grill, deviled eggs, grape salad, broccoli salad, dill pickle salad (sound gross but it was really good!), quinoa salad, pasta salad, taco salad, choc chip cookies, blueberry muffins, blueberry tarts, a red white and blue cake, and a gorgeous and delicious red white and blue trifle (strawberries and blueberries are in season here right now so lots of berries in everything).

Summer Spaghetti - Chicken, pasta, cherry tomatoes with a sauce made with butter, garlic, chicken broth. It was very yummy. I took the photo before the chopped basil was added - oops.

At Mr. Spring's request we are having club sandwiches again with his favorite thing ever, tater tots. I guess I make a mean sammich.

We went to a New Orleans style restaurant, I had a shrimp po boy. Yum! The food was fantastic.
