Fifi, I was able to use them all up! YAY!! And people freaked OUT over everything I made, it was awesome. I had to come home and print out recipes to hand out. Nothing makes me happier than feeding people and them actually enjoying it. One guys eyes lit up and he said "Did you say MINI CHEESECAKES?!?"  I put fresh blueberries and strawberries on top so it was all very 4th of July festive.
Tonight we had BBQ brisket sandwiches, tater tots and corn on the cob.

Fantastic! It does make you feel good when people enjoy your food. And yum at the mini, and festive, cheesecakes! Do you do graham cracker crusts or nilla wafers?
Inquiring cheesecake lovers want to know.

Big picnic yesterday and in addition to all the usual cookout food they had fantastic beef,shrimp, and veggie kabobs, guacamole, wonderful salsa, and some delish brownies. I made my usual deviled eggs and dyed some of the egg whites red and blue to make them 4th of july-ish. : )

Fifi, I was going to do graham cracker, but then I found these cute mini Nilla wafers that fit right in the mini cupcake cups so I took the easy route with those.  I made cheesecake stuffed strawberries too and dipped those in crushed graham crackers so there was a little mix of everything.
I'm constantly taking pictures of everything since I got my new phone so of course I've got a pic. Not sure who brought cupcakes, but they were good.

Fish, squash from the garden, and caprese salad. Everything was good except the fish which was kind of mushy. Not sure, but I'm thinking maybe I over-cooked it.

Potato Salad
Fruit salad that I put mango, banana, blueberries, grapes, cherries, pecans, and unsweetened coconut in.
And seriously, is there anything better than standing over the sink getting all the good stuff off the mango pit? Sometimes it's good to be the cook.

A sort of quick whipped up Paella. With shrimp and Tilapia.
I also hard boiled eggs, and grilled chicken for babes lunch. And cooked Tilapia to have on hand in case he wanted it.
(And I had made blueberry pancakes for breakfast)

Spring, I so envy that dinner...I've been doing very minimal carbs and that just sounds like heaven right now!
That being said, we had a pretty good dinner. I made these pork chops, and even DH liked them (he generally doesn't like them) Grilled Pork Chops with Garlic Lime Sauce Recipe at Epicurious.com
I also did mashed cauliflower (faux-tatoes) and caprese salad, my summer favorite!
Dessert is a delicious glass of red wine.

Yes, we do seem to be on carb overload around here. I'd probably lose 20 lbs if I'd give it a break already.
Mr. Spring didn't care for pork chops until recently and that recipe sounds like something he'd really like (lime & cilantro, he's in).
