Last night: Grilled pork chops, potato salad and grilled corn.

Tonight: Some type of tuna salad (maybe with chickpeas?) and potato chips.

Wile, our Sonic opens in the next couple months!

Roast chicken, spaghetti with garlic scapes, green olives and mint, salad of mixed lettuce and purslane with lemon vinaigrette, lemon squares with fresh blueberries, and a big glass of spiced mint lemonade. Feelin' the lemon love, clearly.

Spring, I love a mustardy tuna and chickpea salad!

No idea, but something that isn't HOT.

Last night we ended up having turkey wraps with spinach, tomatoes and mozz cheese on Flatout light Italian wrap which are my new favorite thing.

Maybe the tuna and chickpea salad tonight if I can figure out how I want to make it.

Buffalo chicken salad (lettuce, red and yellow peppers, onions, buffalo chicken bites, fries, bleu cheese crumbles, ranch dressing) at the firehall.

One of my favorite meals!

But we usually grill the chicken and baste with buffalo sauce. The salad part consist of lettuce, celery, carrots, and blue cheese crumbles. Topped with ranch! Yum...I think I'll make that tomorrow!

A Watermelon Habanero Lemonade, and that's it.

I had Wild Alaskan Salmon Salad and multigrain bread for lunch and I'm still not hungry yet.

BEEF, it's what's for dinner.

Grass-fed T-bone with turnip and garlic scape stir-fry with basil, salad with sherry vinaigrette. Sables and homemade horchata for dessert.

A friend just dropped off a ton of mixed lettuces and snap peas from his garden so I'm having a huge salad of those with celery, walnuts, strawberries, balsamic vinegar and olive oil. Along with some chicken thighs sauteed in olive oil and lots of garlic.

I had forgotten that pak choi was the other vegetable in my stir-fry. I bought four bunches since the farmer was giving them up really cheap. He wanted me to buy more saying it would be the last week for pak choi, so it took a little convincing to make him see that I couldn't possibly consume that much when it's just me.
So yeah, pak choi, young turnips, and garlic scapes.

I'm sick today so I've only been munching on handfuls of raw almonds and different fruits.
I'll try and force down a garden salad for dinner.
