The fish was really good! My neighbor buys it at Costco and wanted us to try it so if we like it we can buy and split it up, which is awesome because I have a small freezer. The rice was excellent! Mr. Spring is a pretty picky eater so I wasn't sure he'd like it, but we both loved it and it went great with the fish. Next time I'll add even more cilantro and lime. I used basmati because I was out of jasmine rice and it was just right.

Tonite was fried rice with snap peas, carrots, water chestnuts, jalapenos, mandarin oranges, black beans, and ham.

Club sandwiches and Mr. Springs request, tater tots. I think he needs a intotdiction because he just can't get enough of the tot.

I made homemade chicken soup. It's dark because I use beef broth and red wine along with chicken, onions, garlic, carrots, celery, orzo pasta, fresh sage from my container garden and ginger, plus a healthy shake-a-rama of McCormick Montreal Steak seasoning, the reduced sodium one.

Too much homemade quick & easy Mac and cheese. I should've done fresh veggies & a garlic broth sauce with my pasta.

So there's a tiinnyyy possibility that I kind of-sort of-maybe-might have gone on a cooking frenzy this morning.
So far in the oven and on the stove - spaghetti sauce, ham and bean soup, mushroom soup, bacon wrapped water chestnuts, baked fish, Cuban fried rice. Still have a few more things I want to get cooked and in the freezer - chili, chicken and gravy, beef and gravy, sauerkraut and pork. Just found a big can of pumpkin in the cupboard so some pumpkin custard will also be made.
Then it's on to making 10+ dozen Italian wedding cookies that will get shipped next week to Washington state!
If only I enjoyed working out as much as I enjoy cooking.
