Grilled bacon, egg and swiss cheese sandwiches. I told my hubby and I think drool came out of the phone.
But that's usual when I mention bacon.

Ugh, I'm going through a cooking slump. I have never been a fan of cooking, but I do it because I can't afford (the money or calories) to eat out all the time. But lately I just can't get motivated to cook anything for dinner...I just don't want to! Does anyone else go through these times? What do you do, just deal with it and cook anyway? It doesn't help that I'm trying to eat low-carb, so it makes my choices pretty slim.
Although, thanks to MojoDojo's post above mine, I've decided we're having BLTAs for dinner...except I have to cook the bacon...ugh

On the rare occasion I cook bacon I still cook it in a skillet. I think it's easy. And I hate grease spattered all over my oven.

The grease doesn't spatter and if I'm going to stink up the house with cooking bacon, I'm always going to cook a whole package of it. It keeps so good in the fridge and we have it for breakfasts on the weekend and lately with all the fresh tomatoes on sandwiches. Amen for fresh tomatoes and bacon. Amen.
I will very occasionally cook some in my cast iron skillet just so it gets some seasoning.
Great. Now we gotta have BLAT's this week!

I agree. Skillet bacon. Cooked on low and turned frequently. Brings out the flavor so well. And I only buy maple flavored bacon.
We're very picky about our bacon.

I love blt's. Once I ordered one from a restaurant and they melted cheese on it! I was so angry!

I made a yoooooge sallied. (translation: huge salad)
chopped iceberg lettuce
diced tomatoes (from the garden, woot-woot!)
corn
black beans
diced avocado doused in lime juice
roasted Hatch green chiles
crushed tortilla chips
and some smoked chicken our neighbors shared with us. They were brined overnight and smoked for several hours and were fall-off-the-bone tender and juicy with the best flavor all through the meat. We have got to get a smoker.
For the dressing I mixed a little yogurt ranch dressing, mayo, salsa, and cumin together. I hate that I didn't have any cilantro.

Well, after waiting 11 days, we found out today that we didn’t get the house. It had 5 offers on it, and apparently someone outdid our $21,000-over-asking-price offer. Disappointing, but we were prepared for that possible outcome. Back to the drawing board!

Good gracious, there really isn't anything quite like the stress of house buying! I know this is going to make you want to slap me because when people told me this when we couldn't find a house in CT I wanted to KILL THEM, but there's a reason it didn't work out.
