Cleaning out the freezer has us eating a lot of repeat meals these last few weeks, but I always enjoy this one.

Pork tamales
Roasted tomatillo salsa (first time doing this, hope it doesn't ruin my beautiful avocados)
Refried beans
Spanish rice
Shredded lettuce, cherry tomatoes, sour cream

Friday night was Dragonfire Chicken at TGIF.
Time for cool weather cooking so last night was oyster stew. Tonight will be chicken cacciatore. And tomorrow night will be liver and onions.

Chicken topped with homemade pesto, tomatoes, and mozzarella cheese and baked. Sautéed zucchini and salad on the side. It was tasty!!

I help out an elderly lady and she feeds me once in awhile in return. She's a great cook but it's never good for my healthy lifestyle so I try my best to keep my portions down. Tonight's dinner was so good.
Giant shrimp cooked in a spicy tomato sauce with peppers and onions, served over grits. Cornbread. Dark chocolate mousse. Mmmm.
