Dear mercy is it SO FLIPPIN' HOT. We were going to have tacos, the same tacos I've been trying to make for 3 days now, but it's so darn hot no way I was cooking so we got sandwich fixin's and had that and chips.

Broccoli with sazon seasoning and garlic olive oil
No very satisfying but I'm dieting.

I have a cold so comfort food was in order. Hamburger casserole - hamburger, turkey burger, garlic, onion, green pepper, rotini, and homemade mushroom soup all thrown together in a large skillet like Hamburger Helper without all the fat, salt, and chemicals. Ahhh. Soothing.

It was supposed to finally cool off, so I made the soup I've been planning for a week. Lots of yummy veggies with sausage. Hubby and son complimented me on it several times. I guess it was good! But it was still quite warm today, not really a soup day. Hopefully, it will be cooler tomorrow for leftovers!

I had a huge pork roast in the crockpot all day with a dry rub on it and we had BBQ sandwiches, baked beans, deviled eggs, and coleslaw. We had something for dessert I don't know the name of, but I call it my Southern trashy dessert because it's a pecan shortbread crust with a layer of cream cheese/sugar/vanilla extract whipped together with Cool Whip folded in then a layer of chocolate pudding and topped with more Cool Whip and sprinkled with pecans. Mr. Spring absolutely loves it so I made that for his birthday.  Next time I'm making it all from scratch though, but either way is so good.
We had our neighbors over for dinner as well as my in-laws that are visiting and we had such a great time.

last night i made pork chops in a rosemary sour-cream sauce that even my e-daughter Saria would have been proud to serve.

Last night I had a salad with toasted almonds, chicken, and a oil & vinegar dressing. That is also what I am having for lunch today.

Last night was tuna noodle casserole. Tonite I have a political dinner with a buffet. It's at the Italian Civic Club right by my house and they have good food there so I will have to close my eyes and nose and try to behave, diet wise.

The boyfriend wanted to take me out for spaghetti but that would mess up my fitness challenge diet (can't let my team down!), so I made him a big pot of homemade chicken soup (I even made the herb/veggie broth) with chicken, rotini, carrots, peas, romaine, and spinach, garlic bread made with light wheat bread.
After dinner I made him a quick batch of oatmeal cookies with pecans and coconut. I only ate one and sent the rest home with him. It was good tho!

Last night we had tuna salmon noodle casserole and salad. I'm feeding pescatarians so it was something we could all eat, but I almost messed up and used chicken broth instead of vegetable. Was almost a pizza night! lol
We may try a Thai place for dinner tonight, we'll see.

Mmm, Thai! That's a favorite in our house!
Last night we had pork chops, green salad, and broiled zucchini. And I made lemon brownies (lemonies?) for dessert...yum!
Tonight is taco night!
