Last night my brother-in-law cooked and we had banh mi sandwiches and cabbage and broccoli stir fry. We had pork for the meat eaters and mushroom for the vegetarians and it was delicious. My first time having banh mi and I'm hooked! Can't wait to make it myself.

Going to my sister's for dinner. Boiled dinner, sour cream cucumbers, plus she'll make something for dessert which I won't eat but she already knows that.

i roasted some mushrooms (cremini and portobella) and then sauteed a large shallot, some garlic and chopped asparagus in a slug of olive oil and pinot grigio. then i made some whole wheat rotini and kept a bit of the water to add to the veggies and sauce which i made by adding a 1/4 pound of herbed goat cheese.
i served it up with some pecorino on top and a glass of very cold pinot grigio and if i do say so myself...
it was AMAZING!!!

Last night:
Chicken and dill, pan fried in a garlic-olive oil, with tomato-basil rice, and a spinach salad with cranberries, golden tomatoes, cucumber and drizzled with a raspberry balsamic vinaigrette. The salad was the best part, though next time I might add feta cheese.
Tonight.... fruit. LOL it's too late for anything else.
Tomorrow will be a shrimp stir-fry on a bed of rice (wish it was noodles but don't have rice noodles and can't have the regular kind).
I'm lazy. Last night was the most ambitious I've been in a while.

The best freakin' burrito ever from the taqueria at our local grocery. I had rock shrimp and Mr. Spring had tofu and both were so good I thought I might slap myself.

This morning I put a big beef roast in the crock pot with brussels sprouts, green beans out of the boyfriend's garden, carrots, onion, garlic, hot pepper flakes (thai hots I just ground yesterday and they are hot!), parsley, a bit of olive oil and balsamic vinegar. Can't wait to get home for supper.

My baby is making me cuban black beans, rice and chicken I think. He's so nervous I won't like it but I know I'll like it. He cooks better than me and I can usually eat what I make lol. I think I'll bring wine and we're watching the debate.
Any wine suggestions?

You go in and fill out a ticket (carbon copy) with what you want and give one to the person making the food and take the other up to pay then come back and pick it up. You can get grilled chicken, shredded chicken, carne asada, carnitas, rock shrimp, grilled veggies, grilled tofu, bacon or chorizo for the "meats" and your choice of black, pinto or refried beans, brown or Mexican rice, different salsas, tomatoes, cilantro, lettuce, onions or cheese and white or wheat tortilla. They also have nachos, quesadillas, taco salad, tostadas, breakfast burritos, and tacos. They have different sizes and we got the smallest for $5 and it was huge. I can't imagine what the grande size looks like.

We got Mexican take out from my favorite place in town. Huge burrito covered in guacamole, pico de gallo, sour cream, and red sauce. I barely ate half.

I split a dutch crunch loaf and put on:
spicy mustard
mayo
pepper jack cheese
sauteed peppers and onions
beef, bacon and cheese sausage
and put it under the broiler for the cheese to get melty and the bread to toast a bit. Had salad on the side.
