I had a roast in the crock pot all day yesterday and was going to roast carrots and potatoes to go with it, but Mr. S was spazzing out to have sandwiches so we did that instead. I melted colby jack on mine and pepper jack on his and we had tater tots and onion rings with them.
Not sure about tonight, someone mentioned burritos, but I have no idea what I'm in the mood for.

Homemade chicken cordon bleu (no bread coating to make it gluten free, it had a garlic infused oil and oregano seasoning though), with seasoned pan-fried potatoes and red bell peppers, and butter lettuce and cucumbers with a pomegranate balsamic vinaigrette. I ate too much and I think I may have undercooked the chicken just a tad (would bake it 40-45 mins next time instead of 35 min), but it was delicious.
I'm starting to get the hang of this 'cooking' thing. Too bad I'm too damn tired during the week!

i made steamed brown rice with pork and eggplant in black bean sauce and edamame.

Halloween Parade party last night so suppler was a boat load of finger foods and appetizers. I love meals like that.
Tonight I made buffalo chicken, romaine sauteed with lots of garlic and hot pepper flakes, and cucumber salad.

Today I felt like mortal crap so I wanted comfort food. I made a broccoli casserole and ate almost half of it. Apparently it was what my body, heart and soul needed because I feel a wee bit better.

Grilled hot dogs with slaw and onions
Baked beans
Chips
And hallelujah, my neighbors mom made sweet potato pie and she brought over a couple of slices. I'm so excited about dessert I ate very little dinner.

^ hahaha. It's simply a young chicken with a fancy schmancy meaningless name. It's doesn't even have to be a hen.

My work is closed today, so I have time to make a weekend-type meal. Beef stew with lentils and North African spices...a new recipe, hope it tastes as good as it sounds.
We have a gas stove, so if the power goes out, I can still finish my stew.

It seems like this storm is causing everyone to make stew! I am making venison stew and praying to the power gods it stays on long enough to finish. If all else fails the grill has a full tank

I wish I had thought ahead and bought carrots and potatoes, I'd totally make beef stew. it's the perfect weather!
