Tonight was spaghetti squash with Traders Joe's turkey meatballs. Leftovers will be for lunch tomorrow. I'm cooking for one for the next two weeks and trying not to eat junk the whole time like I usually do when DH is out of town. So far so good.

Last night was taco soup with hominy and shredded cheddar, avocado, sour cream, and Fritos on top!
Tonight I'm having leftovers from my lunch today of cashew chicken and some peanut noodles and Mr. S will be having taco soup because he's crazy about it. Easy, peasy works for me!

Salmon patties and shredded lettuce on a toasted 8 grain pita with garlic aioli. And a salad with romaine celery radishes walnuts and peaches. Dressing made of peach juice balsamic and a teensy bit of olive oil.

I have no idea what to have for dinner. I made butternut squash soup last night but I had it for dinner and then for lunch today so it's not sounding too appealing anymore. I can't even think of any take out that I'm craving.
It may be a grilled cheese kind of night

Jaynee, it's a great night for a grilled cheese! If I didn't have leftovers to eat that's what I'd be having now that you've mentioned it. Went to Sea Thai today in SR and it was really good!

Burritos from the local grocery. I knew the second Mr. Spring asked "What's for dinner?" that he already knew his answer. He had that burrito look in his eye.
He got tofu and I got grilled veggies.

We camped out in the boyfriend's woods last night. He cooked the most amazing chicken on a spit over the fire. The cats and dogs got some of it but I think the 2 of us ate most of that 7 lb chicken.

We ate a late lunch so no cooking last night and I had cheddar and sour cream Ruffles for dinner.
Tonight I'm making potato, broccoli, and leek soup. I've never had leeks before!
