Yet again I posted our meal before we ate it and JINX! We didn't have it.

I got out of my physical therapy appt. WAY late so I made grilled cheese and tomato soup.

We had Really yummy turkey meatloaf sandwiches last night! I had made the meatloaf the night before; it was really simple, just had some sautéed onions, ketchup, worsteshire sauce, some a1, an egg and bit of mayo for extra binding since I didn't have anymore eggs. For the sandwich, I sliced the leftovers up, browned the slices in a frying pan and then melted some Colby jack cheese on them. Then I made a chipotle mayo, slathered a bit of that on sourdough toast, stacked the heated/cheesy meatloaf on that and added some sliced avocado. It was soooo good. I made some easy roasted fingerling potatoes for a side too. That was one dinner where leftovers were totally better than the original.

Baked salmon with the same topping I had on the haddock last night with romaine lettuce leaves, a tomato and orzo pasta

A conglomeration of leftovers again. Venison heart and liver, green peppers, onions, jalapenos, mushrooms. Buffalo chicken. Peas.

Buffalo chicken, pepperjack cheese, and horsey sauce in an 8 grain pita, pressed in a skillet with another heavy pan on top. Roasted veggies. And a tiny perfect seckel pear.

I'm trying slow cooked french fries for the first time and I am hooked! No more ice bath, double fry for me. I'm cooking it in olive oil and they are quite lovely!

Serving with new york strip + some sort of superfood veggie salad mix from costco that has baby kale, lettuce and brussel sprouts with dried cranberries and toasted pumkin seeds.

Until Mr. Spring gets sick of them it seems our household has adopted the "burrito Friday" meal plan. So Oliver's burritos it is!

Webbie, that veggie salad sounds really good, I'll have to look for it at our Costco. That french fry method sounds too good to be true!
