Costco dinner

Fried battered cod (from the box)
Marinated mozerella with pink salt, fresh black pepper, balsamic vinegar, olive oil tomatoes & basil
Instant quinoa and brown rice pilaf that I doctored with some fresh lemon zest. I added a little of the tomato mozerella juice to boot.

I think the only thing that didn't come from Costco was the basil.

My mom and I had creamy tomato soup for lunch at a small cafe. For dinner we had club sandwiches made from Christmas left overs. Both hit the spot.

Mr. Spring has some pork shoulder going in the smoker I got him for Christmas. I never thought I'd see him so excited about preparing food, I love it.

So we're having pulled pork (fingers crossed it comes out good, y'all), baked beans, and coleslaw. I'm even going the extra mile and making real baked beans instead of dumping from a can and heating.

With leftover pork I'm going to attempt Brunswick stew next week.

My husband is outside grilling a brisket, a couple chickens, and turkey sausage along with veggies and mushrooms. He also made salsa.

trying to decide if i should order chinese - but then i'd have to get dressed again to go pick it up. i'd feel awful making them deliver it when i live less than 2 blocks away...

I am having sourdough bread, fresh blackberries, cherry tomatoes, celery sticks, 2 different kinds of Irish sheep's milk cheese, and a tangerine with iced chai, no milk, to wash it all down.

We had salmon marinated and glazed in a mixture of dijon mustard, garlic, worcestershire sauce, and brown sugar. Garlic mashed cauliflower (mock mashed potatoes...so good!) and spinach. Chocolate croissants for dessert.

Also, we are doing it up for NYE with a bottle or two of prosecco!!!
