It was nice. But I put too much ginger in it. Made good leftovers too.
Tonight I'm having lasagna with zucchini strips instead of pasta sheets. It's really good! With spring greens that I think ate collard greens over your side.

had 4 taco de lenguas last night. now i know why they server them with 2 tacos each. lengua is getting expensive.

Spring ~ Do you follow different corn bread recipes, or just add to a basic one? I have a great one, and wondering if I can just add different stuff?

CC, I don't have a tried and true because I keep coming across little variations here and there and always want to try them.
I guess it depends on what you'd want to add, anything specific?
And of course if you have a great basic you've gotta share it with me.  I can't ever leave well enough alone and Mr. Spring is always saying "This one is good, can't you just keep making THIS ONE?!"
What I'd like to find is a small cast iron skillet that holds just enough for cornbread for two. Reheated cornbread is not really my favorite and I feel so wasteful throwing it out.

I keep meaning to add jalapenos, but forget until it's in the oven. You seem to add lots of fun stuff though, so was wondering if I could just add it to this recipe. I think cranberry and some sort of nuts would be good!

You could definitely add jalapenos to that and maybe some sharp cheddar and regular corn kernels. Nom-nom. Cranberries and nuts would be good too!
I've never made cornbread with creamed corn; the stuff in the can sorta squicks me out.  I know it would be good, but it would just be one more thing for me to buy.

I like creamed corn directly out of the can. : )
Today I had sushi for lunch and KFC for dinner. Quite the opposite sides of the healthy spectrum. And both delish. : )

I got spoiled by my grandmothers creamed corn, it was a gazillion levels better than the stuff in the can which sorta reminds me of a mix of dog food and baby food.  Her's was made with silver queen white corn and was thick and creamy. Have mercy, it was good.

I felt like experimenting so I did baked crab cakes then I put one in a whole wheat tortilla wrap with some lettuce and shredded cheese and added a little ranch dressing and it was oh so good then I had a glass of moscato to wash it down

Last night went out for Mexican with the boyfriend and his sons. They are all so uncivilized and talk loudly about totally inappropriate meal topics. Loads of laughs. : )
