We had salad too so that cut it down a little but DD1 had seconds. Hooray for leftovers!

Butternut Squash-Apple Soup with a rice blend (black, brown, white) mixed in and topped with scallions.
Had roasted squash seeds for an appetizer

Homemade quesadilla with refried beans and monterey jack cheese, dipped in salsa and guacamole. I really want more but not sure I can justify a second tortilla full of cheese

I just looked at the link. Looks yummy but did she really have to label the veggies on the photo? 'Carrots' no sh*t Sherlock.
I had pork chop with fried Brussels sprouts, leeks, carrots and apple slices. Followed by Greek yogurt and walnut halves.
My New Years resolution is to eat more veggies. So far, so good.

I think tonight will be baked fish with a pesto nut crust, sweet potato pierogies, and finish up the peanut butter cookies.

Spaghetti squash with sauce and Trader Joe's turkey meatballs. Probably some broccoli on the side.
I'm craving every unhealthy food possible right now, but I had tons of junk last night and really don't want to negate the workout I did this morning.

We had beef and veggie soup. My son ate every stinkin' piece one by one. He might gather up three carrot pieces, spit them out, and then pick up one of those. My daughter beat him and she typically takes forever.
