Chicken and parsnip coconut curry with dandelions (and steamed rice) on the side. I hate to praise myself (or do I? ) but it was damn good. Lol!

I had some dental work done today so it was the perfect excuse for some (soft foods) breakfast for dinner.

Pancakes
Scrambled eggs
Cheese grits with bacon

Taking the boyfriend out for his birthday. He will pick someplace weird like Perkins, but hey it's his birthday. I will probably get their baked fish. Or maybe pancakes. : )

open faced Manwich with Amercian cheese and oven roasted rosemary fries with skin.

I am making yellow eyes, pork chops, and mexican cornbread for my mom. She is bringing greens. I don't care what greens I love them.

I will also be using the remaining yellow eyes to make a soup.

I forgot that Perkins has such a nice senior/small portion menu. I got eggs benedict, hash browns, fruit salad, and many cups of hot tea. Perfect portions.
I think tonite will be chicken strips with jalapeno jelly and probably parsley potatoes (I can't get rid of that craving).

Mr. Spring was craving "burrito Friday", works for me. I'll be getting mine with shrimp and he'll have tofu.

And I'm on a chocolate pudding craving spree so that will be dessert.
