I have a pot of chili on the stove, and a baked potato in the oven. I love using a baked potato as my chili bowl.

Sloppy Joe's with a few changes
Spring greens salad with dijon shallot vinaigrette

When I told Mr. Spring we were having sloppy Joe's without tater tots I thought he was going to start crying.

A toasted cheese sandwich with hot pepper cheese on lite wheat bread. And a perfect avocado, sliced thin with a touch of lemon juice, hot pepper flakes, garlic powder, salt, pepper.
Dessert will be at my sisters where we are trying some new recipes for Passover - praline macaroons, a chocolate honey cake, and something made with matzo, caramel and chocolate. Plus I'm making crescent roll cheesecake. Not for Passover. : )

If I eat anything it will be leftovers which isn't very exciting so I'll share what I had for lunch instead.

My neighbor took me out for an early birthday lunch to a Thai place and I had: Holy Basil Chicken onion, green bean, carrot, bell pepper, zucchini, mushroom. Came with jasmine rice and salad with a yummy roasted peanut vinaigrette. I had Thai iced tea to drink. It was extremely tasty and I ate the whole darn plate full which is why I'm doubting there will be any dinner tonight.

After dinner at the older sister's tonight, I feel like a tubalard. Appetizers - hummus with chips, caprese salad, and a rum runner. Dinner - ham and scalloped potatoes, fried cabbage, fried green beans, and a rum runner. Dessert - crescent roll cheesecake, pumpkin mousse, and a run runner. Too much food. Too much booze.

My daughter requested baked ziti, so we had that and garlic bread. That was fine with me since it's quick and easy.


Salsa verde chicken with cornmeal dumplings and a mixed greens salad with avocado

I wasn't sure about the chicken since it was so simple, but it was really tasty and definitely a keeper. I've got this cookbook and can't wait to try some more from it.

ETA: I realize the website I linked to didn't put cilantro in the dumplings and that's just crazy. CILANTRO RULES. There is supposed to be 1/4 cup cilantro in the dumplings and next time I'll add more because I big puffy heart it.
