We are having mustard greens sauted with garlic and olive oil but kept bright green and crunchy and Stove Top Savory Herb stuffing. For desert: lemon and poppy seed muffins

When I am sick I have bizarre cravings.

Tonight is leftovers from passover dinner.

So some combination of the following:
Matzoh with charoses
Hard boiled eggs
cornish game hens
baked blooming onion (with matzoh meal instead of bread crumbs, of course)
roasted root vegetables

Since I'm doing the 2 hours of driving it takes to ride my horse and it takes me about an hour to give my other horse her medicine, I will take whatever seems easiest so I can sleep sooner. I'm worn out because I haven't stopped going and doing things for a while!

Chipotle just opened up so we ordered online and picked that up for dinner. Mr. Spring said the line was extremely long when he went in, but he was able to pay, get our order and go before the line even moved. Online ordering is where its at!

I got a burrito bowl and hadn't eaten since breakfast so I inhaled that sucker. I am SO stuffed and it was SO darn good.

I was exhausted after a busy day and it was just me and my son, so he ate ramen noodles, applesauce, strawberries, and greek yogurt. I had strawberries, greek yogurt, buttered toast and tea.

We are almost having the same for dinner at my house except we are also having roasted green beans, carrots, and red peppers. Not sure what my in laws are bringing for dessert but I made bread pudding to share too

Passover dinner last night. I see that I took more pictures of booze than of food, but we had a ton of wonderful food - appetizers, kugel, brisket, matzo ball soup, matzo bark, honey cake, etc.
And it's not everybody who gets to have a tank right outside their window (it's at the VFW across the road).

Went to aunt and uncle's for brunch today then 'dinner' will be artichokes and easter bread at the oddparents'.
