I made a frittata with chicken apple sausage, red & green peppers, onion, maitake mushrooms, spinach, and dill with a salad on the side.

Just a PSA, make sure when you're not used to putting your skillet in the oven, when you take it out to put an oven mitt over the handle to remind you that it's hot so you don't grab it with your hand. And burn the palm of your hand.

I'm really good about this with my cast iron skillet, but this is the first time using my regular skillet in the oven.

I am cooking a small turkey breast, and will slice it up for a sandwich tonight. It is colder today and I would like one hot thing on my plate, so I am considering a baked potato. If not, veggie chips.

Tomorrow I am going to be served by my best friend. Hehe. I craving the pasta pesto w/ tofu from the restaurant he works at. They have the best marinated tofu.

Last night was a bit of veggie elbows mixed with sauteed radishes, red bell pepper, and mushrooms. I mixed it all with homemade marinara and a bit of light cream cheese and topped it with basil and scallions.

Tonight will be hectic - half work day, gym, meeting my sump pump guy, get BK, dance class #1, feed her a packed dinner, dance class #2, then an exhibition night at her school - so the boyfriend volunteered to go to my house and surprise me with whatever he can throw together for a late dinner together.

Thank God, or it would have been soup for breakfast, soup for lunch, and soup for dinner. They would have been three different kinds, but come on!

Fish sticks and tartar sauce with enough dill in it to knock a person out, I always add way too much
Mac n Cheese (finally finishing leftovers, get this stuff away from me!)
And either salad or purple hull peas

Not for dinner tonight, but a couple of the soups husband made this winter.

Cream of asparagus, with roasted asparagus and homemade croutons on the side and homemade chicken noodle.

fianlly getting a bit of an appetite back so today I made a huge batch of Cuban fried rice (5-grain rice blend, ham, pineapple, jalapeno peppers, black beans, coconut milk).
