I'm pretty much on a week long dandelion kick. Dandelion salads, greens n beans, sauteed and added to past. Mmmm.

Thanks to ystrdy's thread: homemade pizza. It's going to be on naan (never used that for pizza before but I think it should work), and I sauteed a bunch of vegetables yesterday as toppings - white and green onions, garlic, zucchini, green and red bell peppers, mushrooms (yuck but the kids like em) and heirloom and plum tomatoes.

The kids have the option to use pasta sauce, too but I will pass on that.

I purposely didn't buy extra mozzarrella so we would be forced to limit it to the little we already had at home.

And I bought pepperoni for the kids (again yuck and it won't be going anywhere near mine).

I'm seasoning mine w/ red hot chili pepper flakes and garlic powder.

A little sangria would have been nice but I didn't think of it til just now and don't have any.

Lots of eating out this week. California shrimp salad at Applebees, Buffalo chicken salad at a local bar, poached eggs and corned beef hash at Kings.
Need something light and homemade tonight. Maybe soup - romaine, dandelions, beans, garlic, hot pepper flakes in chicken broth. And some baked fish with a nut crust.

Last nite was bits of various leftovers that were in the freezer - blue cheese and walnut pizza, greens and beans soup (dandelions, romaine, soy beans, garlic, hot pepper flakes), shepherd's pie, roasted veggies.

Mmmm. Lamb chops. That entire meal sounds great.

Tonight will be a stir fry with chicken, onion, garlic, cauliflower, brussells sprouts, 5-rice blend. And I think I'll make a sugar free cheesecake-in-a-mug for dessert.

I'm hoping the boyfriend will go to our tiny local hoagie shop and bring me my favorite - chicken salad with sliced egg, lettuce, tomatoe, onion, jalapeno peppers on a toasted wheat roll. And some Wise chips.
