I got all kinds of goodies in my weekly CSA produce box from the farmers market so I made a big salad tonight with arugula, beets, carrots, soybeans, walnuts, balsamic vinegar, olive oil, and blue cheese crumbles.
Then I made eggplant hummus (my regular hummus recipe with a roasted eggplant mixed in) and had it on pita bread.

I have no idea. I am running low on food and do not feel like cooking. It might be popcorn.

I had lots of veggies to use up so supper will be fried green tomatoes, fried zucchini, and fried eggplant. And homemade blue cheese dressing to dip them in.

This my first time and it came out great. I just looked at several recipes and a couple of YouTube vids and went from there.

Soaked the beans overnight. Cut up an onion, green bell pepper And 2 celery stalks. Browned an couple of ounces of pancetta (bacon, ham, whatever you have) and 2 andouille sausages cut up. Added the veggies once those were browned. Cooked that all until transulcent and fragrant. Added the rinsed off beans and 8 cups of water and 2 bay leaves. About an hour in I added 1 tsp creole seasoning. Another half hour I added a teaspoon of baking soda (keeps the beans from making you gassy), kept stirring every 20 min or so. I did add in 1 1/2 tsp of chicken bouillon base then. Finally it'll look like red beans and rice, all thick and some of the beans broken down. Your house smells divine the whole time.

^ Yum.

Last night was chicken soup and tonight will be more soup. My tooth doesn't feel up to a lot of chewing just yet.

Last night was roast beef, mashed potatoes with gravy, asparagus, squash and zucchini. Lunch was a roast beef sandwich on wheat. No idea what I am doing for dinner tonight. May just pick up a pizza.

Last night was tuna noodle casserole and BLTs. I'm not a huge bacon fan (prefer sidepork) but the Amish around here do make some good bacon.
