So many enchiladas recipes, so little time. Those look DEEEE-vine. And I'm starving so that doesn't help!!

I'm going to do a version half-assed based on this recipe. I've got some things I need to use up. I like to refer to tonight's dinner as CORN. Clean Out Refrigerator Night.

I was thinking of how now that you'll live on the west coast, you'll have Meyer lemons galore. I mean, I can get them here (and I have some right now actually), but people have them growing in their backyards! And figs! And persimmons! Granted the rhubarb isn't the same (hothouse grown usually), and the selection of apples isn't the same, nor are the quinces and pears, but still. Two seasons of asparagus and artichokes! Citrus!
See, I'm getting excited for you.

3 egg omelete with ham (from the ham I cooked on Sunday) and cheddar cheese. SO is out for dinner tonight so I get breakfast for dinner which he totally does not get (he never experienced this growing up-I think that is child abuse (kidding of course)).

This ham will have one more life as split pea and ham soup.
