Rotisserie chicken, white rice with cream of mushroom soup in it (I love being at someone else's house, I get to eat trashy food, w00t!), mixed greens salad, french bread.

I got a craving for fish tacos from Nixtamal, so I went over and got an order. They were so freakin good! The fish was extra crispy and well-seasoned with a good amount of oregano. I scarfed them down and not wanting to consume another order, I order a tostada with chicken. Oh, it was dreamy, especially with the salsa roja. I could have eaten more, but decided to show restraint. I love Nixtamal!
I had a weird dinner. A bag of pistachios because I was craving salt and fat. A box of fresh strawberries. A sirloin burger on onion roll. Actually all quite good except too many pistachios. No self-control with those little buggers.

Came across this chicken frito pie today and knew it would be easy for me to make since we're at families house visiting. I tweaked it a little, but it was pretty good and the entire pan disappeared so that's always good.

Starter: Tuna poke

Salad: roasted beet salad w/ goat cheese & spicy citrus pecans

Main: bison prime rib (TY Saria for the tips!), horseradish sauce, mashed potatoes & parsnips made the long way (potato ricer, hot milk etc.) braised brussel sprouts in rosemary creme

Hubby wasn't a fan of the medium rareness of the bison, but the cooking technique was on point. I should have seasoned it more aggressively though. Bison is very blah to me. I miss the fat of regular beef. Also, I didn't get any pan drippings from the process so it's a good thing I didn't make plans to do yorkshire pudding.

Everything else was stellar. Especially the braised brussel sprouts.

Or if you have leftover meat, shepherd's pie. You can get it to be a lot more flavorful that way. Otherwise you can make soup.

I have 2 salmon sides that I either have to use today or freeze, so one of those with rice or egg noodles and veggies.
Fat does not make you fat. It's actually pretty important.

Tonight is Chicken Alfredo..which everyone loves but my son. He's just not a noodle fan.
Not a noodle fan? That's just crazy! I could eat some variation of noodle every day of my life and be very happy.

Probably some kind of pasta for dinner tonight, not entirely sure what kind though.

After traveling 10 hours today I wasn't anywhere near being hungry until my step-mom suggested biscuits, bacon and scrambled eggs for dinner. Why yes, I think I shall eat something after all.

I am satisfying my duck craving tonight by making duck confit! I used a Sichuan peppercorn and five spice salt mix. Probably a citrus and frisee salad and maybe some duck or goose fat roasted potatoes.
