I'm excited for tonight's dinner! I've been craving Hainanese chicken rice for a while now, and today I'm finally making it, with a couple of added touches. It's a bit of a production, so that's why it has taken a little while to satisfy this craving. I'm making both a ginger sauce and a chili sauce for it as well. Mmmm.

It's my last day visiting Mr. Harley in North Carolina before my sister and I head off to Virginia Beach for a few days so we're fixing a big dinner at home.
Breaded steak, homemade pesto and pasta, a good crusty loaf of bread, a big salad, chocolate ice cream and strawberries for dessert. And a couple rum and coke zeros.

Roasted fingerlings, maybe with some ras el hanout and lemon, and pan-fried merguez. Heh, I should really get some greens for a salad.

Pan seared (dry) sea scallops with a browned butter sauce (with shallots and fresh parsley). Rice and a tossed salad. YUM!!!

I have never attempted brown butter before-I could see how it could bad very quickly but my 1st attempt was spot on!

Back from vacation so I'm trying to do some damage control (ate way too much and drank waaayyyy too much, not every day but still too many). So today is a protein day. Hard boiled eggs for breakfast and lunch, and a big steak for dinner.

I'm having pierogi again with mushrooms, snow peas and onions. If this huge squash I have is good when I cut into it (I've had it a WHILE) I'm going to roast that for my side.

Last night was homemade chipotle spaghetti noodles, with garlic & shrimp sautéed in butter over the top.

I had leftover roasted chicken to use up so I made cheesy chicken and wild rice casserole with a few changes. I added spinach and mushrooms and also used a brown and wild rice mix instead.

I'm headed back for seconds now, it was good!

I'm so sick of cooking for me.

I really wish I could have just eaten chocolate chip cookies with milk for dinner. I would have been much more satisfied.

Butter lettuce and spinach salad with mandarin oranges, mushrooms, roasted chicken, sliced almonds and a mix of pomegranate vinaigrette and ranch dressing.

Also had a baked potato, but I messed it up. How does someone mess up a baked potato? Leave it to me!
