Bone in/skin on chicken breast seared on the stove top and then put in the oven to finish up (high heat!!! 450). Roasted potatoes, peas. And I hate to admit it, cranberry sauce. Jelly kind. Yep. Gosh I hope Saria does not read this

Shhhh, let's pretend I whispered it so he didn't hear me!

The dog LOVES popcorn, but with all the skin issues he has I don't like to give it to him anymore so I trick him with these little treats instead. He gets so incredibly excited when he hears it popping I have to give him something! He even perks up when I say the word out loud.

Popcorn is Belle's favorite food, too. She goes CRAZY when she hears/smells it in the microwave.

I have a funny story. Belle never wakes me up in the middle of the night. When I was in grad school, I lived with my mom and she takes Ambien which sometimes makes her eat in her sleep. Well, one night Belle was FREAKING out at 2:00AM. I could not figure out what was going on. She kept pawing out me, pacing back and forth, trying to wake me up. I was so confused. Finally, I figured it out....my mom was making popcorn in her sleep!!!

Cyndi, that is so funny!! Poor Belle, she wanted a 2am snack too.


I just wanted to add this is the tomato soup I had and I'm absolutely thrilled with it. I no longer have to search for a decent tomato soup for a quick meal.

I've often wondered what sort of drug they put in microwave popcorn. Miss Pita doesn't really like any people food but will jump up and put her whole face in a bowl of popcorn and just start chowin down.

Tonite's dinner was a big salad with rotisserie chicken (chicken breast with homemade rotisserie seasonings). Meringues for dessert.

Jeep, what's your rotisserie seasoning mix?

I have some premade McCormick's (I won a big box of seasonings and it was part of it so I'm using it up) and I've really enjoyed it and want to make my own blend.

I'm making a Coconut Chicken recipe from my Atkins cookbook for me and the BF. It's making me branch out since I'm using chicken thighs, which I rarely use. I'm also using fresh ginger and jalapeņo, which are two things I normally don't use.

here ya go. measurements are approximate so experiment. this amount would make enough for a good sized chicken or lots of cut up chicken.

Rotisserie Chicken Seasoning

2 tsp paprika
1 tsp onion powder
1/2 tsp garlic powder
1 tsp thyme
1 tsp salt
1 tsp black pepper
1/4 tsp cayenne or other hot pepper

I've been obsessing on sea salt lately and just got a big sampler pack and love them all. I used some alderwood smoked sea salt in this seasoning mix and it added a nice smoky flavor.

Thank you, Jeep!! I love making my own spice mixes, but I'm just not good at coming up with my own.

When I suggested to my mom she should make her own taco seasoning when she grabbed a packet at the grocery, you would have thought an alien popped out of my head with the look she gave me.

My problem is I never write anything down so even when I put stuff together that I love, I forget how I made it. I got this one online somewhere and wrote it down right away, tho I changed the amounts to suit me.
Come to think of it I need a good taco seasoning mix. Mmmm. Will have to look it up.
I never invite my mother over to eat anymore because she always complains that I use too many 'weird' herbs and spices and salts and oils and other ingredients. If it's not plain old salt and pepper she doesn't like it. And god forbid I should serve vegetables that aren't doused in gallons of butter.
Grrrr. Of course I rarely eat at my parents' house either since she uses too much salt and butter on everything. So we're even I guess. End of mini-rant.

I made some crockpot sticky chicken that used fresh ginger- it was yummy! Although you do have to broil the chicken a bit at the end so not completely done in crockpot!

I had macaroni bolognaise. I added a few fresh cherry tomatoes too. I had a pork sausage and added that but it didn't work so I picked the sausage out. It was blegh!
