This nice warm day it will be grilled chicken over a mixed green salad, hard boiled eggs, and whatever else I decide to throw in the mix.
Last night I made my daughter homemade nuggets and fries. She ate the nuggets and loved them after much cajoling, but refused to taste even one fry.
I had a baked potato topped with broccoli and baby bellas in a blue cheese sauce. Then I had the worst indigestion ever.

Leftover miscellany. You know what I could really go for though? Chicken Kiev. I haven't had it since culinary school, but man, I love Chicken Kiev! Crispy chicken with oozing herb butter center. A self-saucing delight! And it must be made with chicken thighs, classic recipe be damned. Tastes way better, and it's not like this is diet food.

Leftovers here as well. I can't decide between the shrimp burrito (it was so good I've been craving it all day) or the black eyed pea concoction over rice with roasted asparagus and mushrooms.
I'm thinking about trying a strawberry buttermilk pudding cake.

I'm still whittling away at leftovers so I'll either have a repeat of last night or a shrimp and Spanish rice burrito.
Finally Mr. Spring will be home late tonight and I no longer have to eat leftovers for a week straight!

I haven't had Spam since my gramp died. For some reason he thought I really liked it so quite often I'd be sitting there talking to my gram and he'd come hand me a plate with a slice of Spam on it. That's it. Nothing else. Just a slice of Spam. I don't love it but I don't hate it so I'd always eat it to make him happy. And now I'm hungry for it.
Visiting Mr. Harley down in NC and we're grillin tonite. I'll be having a big thick rare steak and a big salad.
