Easter dinner was lasagna, garlic bread, caeser salad, strawberries and whipped cream. Mmmm.

We had Easter dinner at a friends house and there was ham, green beans, roasted asparagus and potatoes, sweet potatoes and french bread. Had I known the menu ahead of time and that there would be no deviled eggs I would have taken some.  I will be making some this week.
We went with pizza a few nights ago instead of vegetable beef stew so that's on the menu tonight.

Last night was simple - a roast, baked potatoes and acorn squash w/ agave nectar. Tonight is down by a concert venue - Guatemalan is likely, but I won't know until we're there!

We traveled all day, so I ended up making grilled chicken, spinach, and tomatoes in a brown rice wrap for a late lunch/early dinner.
Then some veggies with tofu noodles and plenty of sriracha for a late dinner.
Tonight will be pan-seared polenta with a mushroom, spinach and turkey sausage tomato ragout.

Herb crusted chicken and mushroom risotto. I think that some roasted broccoli would be yummy with it, too, so I think I'm going to try to run out today and buy some broccoli! I can't wait.

We're having Smith family pasta bake, bi-color corn on the cob and salad.
I cut the pasta recipe in half, but still used a full jar of sauce and stirred in cooked Italian sweet sausage. I had a little nibble after it came out of the oven, it's yummy.

veal chops coated with garlic and crushed saltines and cooked in a hot skillet. with plain old green beans out of a can (I love them). mandarin oranges for dessert.

We got our beef shares yesterday, so tonight we're having grass fed beef ribs. Maybe some artichoke for veggies plus salads. I'm ready for dinner now!

Subs/gut bombs/hoagies/hero-whatever you prefer to call them. Italian sausage cooked on the grill with peppers/onions (also cooked on the grill-keeps the smell out of the house  ). Put in a really good italian hoagie roll.
