Yesterday I tried, for the first time, pork chops in the slow cooker and from-scratch macaroni and cheese. It was rediculously easy, I just made it up as I went along with experience I have from making cream sauces. Baked it for bubbley cheese on top- my boyfriend presented me with pen and paper and made me write down the recipe. Success!!

I made a gringa version of huevos rancheros. I fried corn tortillas, topped with scrambled eggs (the kids don't like goo) and a tasty salsa. I made bacon, my hubby's grandmother's pinto beans, and fried potatoes. Muy bueno!

Baked rainbow trout in garlic and chilli sauce with noodles and basil leaves.

Maybe basil, tomato and mozzarella salad as well afterwards.

Edit: I had too much chilli on the fish and set the smoke alarm off when the sugar in the marinade started smoking. The cat is now under the sofa. My mouth is tingling from the chilli. Nice fish though.

My brother and I made 4lbs of mussels yesterday. The first batch (2lbs) was with garlic, crushed tomatoes, crushed red pepper and white wine. The second batch was with garlic, onion, butter, white wine and lemon.

The first batch was a million times better.

Later we all made buffalo chicken dip with celery, sticky rice, grilled teriyaki salmon, roasted asparagus with sun dried tomatoes and scallions, caprese salad, and I made a light "cheesecake" with strawberries.

I usually have most of my meals made on Sunday for the week but I wasn't very inspired yesterday. So I think tonight will be chili and dandelion salad.

Something labeled "spinach orzo soup" from the freezer and I'll probably add some chicken sausage and we'll have french bread with it.

Definitely a little warm today for soup, but it'll do.

I might have to start a thread on "What can I make with the random ingredients I have left in my pantry". I really wish I was more creative.

Cereal. I can't be bothered cooking.

Do you cook dandilions? Is it only the leaves you eat? Can you buy them or do you pick them? I'm tempted to try them but I'm scared of dog pee, even after washing.

I eat dandelions raw (big salads, sandwiches) or cooked (greens and beans or 'wilted' with bacon grease).
They do sell them at markets/grocery stores in cities. But where I live people would laugh if someone tried to sell them dandelions. They are everywhere around here, free for the picking.
I use the leaves and the buds and will even throw in some pretty flower petals in a salad. Many people won't eat them after they bloom, saying they are tough and bitter. I disagree and eat them into the summer.
