Dandelions take well to warm salads, too. Think of a warm spinach salad, but with dandelions.
Or an aggressive dressing with anchovies, lemon, and garlic.
With thinly sliced chillies, lemon juice, and plenty of shaved cheese (like grana padano) plus some grated as well. This is a favorite for me. Very addictive and refreshing.
Also good with toasted sunflower seeds and strawberries and sherry vinaigrette.

I didn't post here on Mother's Day! Per my mom's request I made seared tuna w/ sushi quality fish, artichoke and a mixed greens and fenne salad. Yum-my! Breakfast was french toast w/ hazelnut+cream spread in the middle and homemade strawberry syrup over the top, and bacon on the side.
Tonight is chicken leg quarters most likely broiled by Mom.

Pot roast, mushroom gravy, mixed steamed veggies w/ butter and Tony Chachere [sp]
Told hubby this am I was making this, minus of course the pearls, dress & high heels, but my hair would be done...he says, oh well, baby steps...

Baked lemon pepper cod, Trader Joe's harvest grain mix (which is fantastic) and a saute of edamame, sugar snap peas, onions, corn and basil.

Thick porkchops with honey gremolata. Veggies (broccoli, sugar snap peas, green beans). Fruit salad. Tea.

Since it is wet and rainy here in my area...meaning honkball practice is cancelled...I will make enchilada's. I found some low carb tortillas...so hopefully won't blow my low-carb diet.

My much needed grocery trip was thwarted today so we're having sandwiches from our favorite place.
Hopefully tomorrow back on track with my grocery trip and I'll make gnocchi, sausage and spinach soup with french rolls.

Hubby is out of town so I had a quick and easy dinner. Leftover roast chicken, diced, and topped with half of an avocado, diced. Drizzled with some olive oil, a squeeze of fresh lime juice, kosher salt and ground pepper. Having a glass of wine as well.

Hubs just told me that he has a loaf of bread in the oven, topped with olive oil, salt & rosemary... I'm pretty sure he made the dough yesterday, so it's had a nice slow rise... I can't wait to get home & eat it allll up. (it should be cool by then, right Ms Saria?)

I am on my own for dinner tonight (well, the next 3 nights actually), which is always a good excuse to not cook. I'm thinking sushi tonight, haven't had that in a while!

Leftover Enchilada's for the adults.
Corn Dogs/Peas for the kids because I tortured them last night with the enchiladas. Got to broaden those palates.
