What's for dinner?

Last night was grilled pastrami sammiches on homemade bread with cracked black pepper cheddar (this stuff is absolutely fantastic! TRBL lurves it!), homemade mayo and spinach. And a funky summer beer (a very light ale with lemon grass and yuzu)
When I grow up, I wanna be a Jiujitsu Turtle!

Since Mr. Spring had an absolute FIT over the french dip sandwiches last week I repeated that last night. Nom, Nom.

Tonight is YTBD, it's so warm neither of the ideas I had on my menu for the week sound good. Either grilled ham (or maybe bacon) and cheese with tomato soup (trying to make my own for the first time) OR Sockarooni sauce with white beans over rotini with corn on the cob and maybe a salad.

All I really want is to douse myself in ice water and it's not even summer yet.

TRBL, that sounds SO good.

I've decided that I'll never get down to my original weight, and I'm OK with that--After all, 8 pounds 2 oz. is just not realistic.
My brother deigned to come down for the evening from Phoenix, and insists we have to go out to eat at a good local Mexican place. While I love their food, this will be my third restaurant meal this week. Too much especially when I'm already feeling icky!

Brisket from local grass fed cattle. I bought one from the CSA and it was HUGE. So Mom made it since my brother was coming down and could take some back to Phoenix with him. We're still both going to get sick of it!

But given I didn't have the energy to cook, and she... well, we're better off if she doesn't cook most things, but she makes the best brisket ever.

Yesterday was sinful nachos at the game.

Made chili for supper tonite. Weird thing to make on a hot summer day but it sounded good.
Then I made 'Almond Joy' coconut ice cream (sugar free, dairy free, low carb version) for dessert. Oh my, yes, it was good.

I have no idea when I'll participate in this thread again since it will be weeks, maybe even months, before I get a kitchen again. I can share what fast food we're having for the evening, maybe?

I need to find that breakfast thread again. We found this AMAZING place in town called The Hidden Kitchen and we've been tearing up their breakfast every morning since.

Ask your girlfriend if she'd like a beer. Give her three options at least two of which you know her to be particularly fond of. Bring her choice to her as she reads girly stuff on the web. Pour a generous amount of single malt Scotch for yourself - almost a double - in a lowball glass over three ice cubes. Set aside after taking a big sip just to make sure it's Scotch.

Peel and cube a butternut squash into 1/2 to 1 inch cubes. This will take about 10 minutes, after which your glass of Scotch should be ready to sip in earnest. Melt 1/3 C butter in 1/2 C water, add 3/4 tsp salt. Do this in a frying pan with a cover in the oven as it's heating to 375. Put the squash, 3/4 tsp celery seed and 2 tbsp savory in the pan. Drizzle with 3 tbsp olive oil and crack some fresh pepper over it. Stir up and bake, covered, still at 375.

A half hour after the squash started cooking, heat 3 tbsp olive oil and 1/2 tsp salt in pan over medium high heat. Add 4-6 kaffir lime leaves, take leaves out as they begin to brown/shrivel, about 5 min. Add 2 mined cloves garlic and 1/2 cup cubed sweet onion to the oil. Mention to your girlfriend that this is about the time she should exclaim whatever you're cooking smells really good. Stir until translucent. Add 8 oz of cubed steaky, oily fish like mackerel, I used wahoo, any steaky fish will work, but the wahoo really worked well.

Remove the squash from the oven and remove all but two cups of the squash, saving the rest to use in another quicker meal. Cry out in pain as you lift the hot frying pan cover with your bare fingers. When your girlfriend comes to the kitchen, allow her to instruct you how to treat the burn but insist you were more scared than hurt. Leave all the juice in the pan and start cooking it down, uncovered over medium heat. When the liquid is nearly gone and the squash begins to brown, about 5 minutes, add 1/2 bottle (5 oz?) Trader Joe's yellow curry sauce to the squash and simmer on stove. Trader Joe's yellow curry sauce is super awesome with winter squash.

After you've been sipping single malt Scotch and occasionally stirring the fish and squash for the same five minutes your squash has been on the burner, add two cups chinese broccoli and several dashes of tabasco sauce and 1/4-1/2 tsp salt to the fish. Spinach would kind of work instead of the chinese broccoli, kale may work better than spinach. Cook for five more minutes, covered with the same cover you burned yourself on, stirring everything occasionally while you finish your Scotch.

Fix a small lettuce salad with balsamic vinegar, sesame oil and fresh cracked black pepper. Arrange everything on plates and add a wee pile of leftover cooked white rice and a bit of spaghetti sauce in the middle to add color. Ask your girlfriend if she needs another beer and suggest she take a photo for Facebook.

Serves two.
Cuban Rice. My version has brown rice, browned pineapple, jalapenos, black soy beans, lots of veggies, pineapple juice, fresh parsley and basil.

Tonight will be The Shoreline Diner. We're getting broiled cod with baked potato/salad and a grilled chicken sandwich with baked potato and we'll share it. Mother-in-law is getting a tempeh reuben with bean chili.

I have a sneaking suspicion tomorrow night will be Sonic because we'll have no dining room table to eat at and only a floor to sit on since all our stuff will be gone. Can't go to a restaurant and eat because the dog can't be left alone, but at least he can go in the car with us.

Boy, this is interesting.

It's sunday = roasted chicken, this time with israeli cous cous, mixed in with roasted red peppers, marinated artichokes, mint and shallots.

I made plain cous cous for the kids with just a little butter.

hmm...dinner this week...just not happening. Hubby is out of town...I refuse to cook. LOL. We will make do with stuff already in house or grab something to go!!!
