Totally cheated last night and had sweet and sour chicken and vegetable fried rice via the frozen section at Trader Joe's. Had strawberry mochi ice cream thingie for the first time; love. So squishy and weird!

My dinner occurred in two parts: I had a broccoli slaw flatbread pizza and later a spinach salad with grilled chicken.

Last night was dragonfire chicken at TGIF. Tonight I'm staying home and cooking since I've been eating out too much. Going to make shepherd's pie and cook a big pot of artichokes.

It was borne of laziness...I didn't want to chop veggies so I just grabbed some frozen broccoli stir fry, some broccoli slaw, and some pre-sliced mushrooms, cooked them up in a pan while my flatbread was crisping in the oven (and making my house too hot). Then I took some sauce, the veggie mixture, and some cheese and baked, then topped it with fresh basil.
10 minute meal.

I often have naan bread in the house so this would be a great naan pizza. It may have been lazy, but it's sure a great idea.

I'm thinking I may have to copy and make a tortilla pizza with that idea! Mom made the first tomato sauce she's ever made well from scratch on her own Monday. And I had an upset stomach so couldn't really enjoy it! The leftovers spread on a tortilla with cheese and fresh spinach sounds like a delicious quick pizza!

One of my favorite pizza combos has been sliced yellow squash, zucchini and fresh dill with slices of thick mozzarella. HEAVEN ON CRUST. We had it at a farmer's market in CT and I'm pretty sure I groaned loudly. Reminds me I haven't made that near enough times since then!!

It is too hot to eat much.

I had some fresh mozzarella with tomato and olive oil, and chocolate milk for dessert.

The thought of cooking with heat makes me queasy.
