Meh, I don't know. DH has been out of town all week and won't be back till Monday...I hate cooking for 1! I actually did make a real dinner last night though. Tonight might be a homemade quesadilla. I spread refried beans in mine to make it more filling and give it some fiber...yummy!

Jaynee, I'll send a slice of banana bread over via carrier-Calvin for dessert.

Q's are one of my go-to meals when DH is out of town. You can throw anything in there!

Springy, I gotta admit it's a pet peeve of mine the number of recipes that call themselves banana bread that are actually banana cake. Heh, they are not the same!

That looks like a great meal for this weather.
Leftover miscellany, but dessert is grape and lime galette with rye crust. Yes, it's grape pie time again!

Saria I was so proud of the sauce/gravy. It was the perfect consistency and really good flavor. I also roasted the chicken breasts skin on and then used that meat. I sorta used an Ina Garten recipe bit improvised it a bit.

Tonite was leftover Chili Salad. spicy hot homemade chili over a big pile of chopped romaine and raw onion. Something sweet for later will be grapefruit sections sweetened with vanilla stevia.

We went to our local irish bar/pub and I got corned beef/cabbage!!! Yum. I never make this home so I got excited that it was on the menu. Oh, and a pumpkin beer.

We had buffalo wings and pepperoni pizza (both frozen, ahhhh easy night). I made a big green salad and sliced pineapple on the side. I don't like wings or frozen pizza (I am a pizza snob, I guess, I only like brick oven pizza) so I just had a big ol' salad. I made mini pumpkin muffins for breakfast and have been snacking on them all day so I was a bit full

Tonight was leftover Italian meat sauce over noodles, salad and buttery French bread.

Tomorrow night we're having BBQ because we somehow got extremely lucky to live next to the best neighbors ever and after I asked him what that fantastic aroma coming from their backyard was, he shared some smoked pork shoulder with us. I'm going to make coleslaw and baked beans to have with it. It's some of the best smoked BBQ I've had in a really long time, score!!!

I don't know about other Costcos, but ours has some of the best peaches!

Tonight was braciole stuffed with a low carb version of mashed potatoes (made from radishes. sounds gross, but they are really good). Crustless apple pie for dessert.
